Ripe’s Cucumber Halloumi Salad

Ripe’s Cucumber Halloumi Salad is a  delicious side salad with halloumi, cucumber, and licorice notes.

In case you are new around here and haven’t noticed, I’m a little obsessed with halloumi cheese and Ripe’s cucumber halloumi salad is the recipe that turned me onto it.   I plan on doing a halloumi recipe round-up soon so that all my favorite halloumi recipes can be stored and shared in one place, so stay tuned! If you haven’t tried halloumi yet, I highly recommend that you do- it is a cheese that you can grill and it is salty deliciousness.  It is a little pricey and sometimes hard to find, but in my opinion 100% worth it.

I want to share with you the recipe that first introduced me to this amazing cheese- a cucumber halloumi salad with licorice notes from Cheryl Steadman Rule’s cookbook, Ripe: A Fresh, Colorful Approach to Fruits and Vegetablesgrey.  It is one of my most cherished cookbooks and once you try this salad you will see why; all of her recipes are unique, fresh and vegetarian.  I hope you enjoy this salad as much as I do and if you haven’t tried halloumi yet I hope you seize the day and make this salad today!

  • 2 t fennel seeds
  • 4 1/2 inch thick slices Halloumi cheese, blotted dry
  • 1 T extra-virgin olive oil
  • 2 t sherry vinegar
  • 1/2 medium garlic clove smashed and minced
  • kosher salt
  • freshly ground black pepper
  • 1 English cucumber unpeeled, halved lengthwise*
  • 1/4 C tarragon loosely packed chopped

  1. Toast fennel seeds in a nonstick skillet for 2 to 3 minutes, shaking skillet a few times, until fragrant. Set aside in a small bowl.
  2. Increase heat to medium high. (I add a little bit of olive oil to the skillet before grilling the cheese, but the original recipe does not call for this). Place halloumi slices in skillet and brown for about 2 minutes per side. Set aside.
  3. Whisk oil vinegar, garlic, salt and pepper together.
  4. De-seed cucumber halves using a serrated grapefruit spoon or a small melon baller. Discard the seedless membrane. Slice the cucumber tunnel into 1/2 inch pieces.
  5. In serving bowl combine cucumber slices, dressing, tarragon and toasted fennel seeds. Tear the halloumi cheese into pieces and place on top. Toss gently, adjust seasonings and enjoy!

  1. I have never heard of this kind of cheese, but now I”ll have to go look for it! Beautiful salad 🙂

  2. 5 stars
Fennel, halloumi cheese and garlic – this is my kind of salad.

  3. This looks so fresh and flavorful, awesome combination!

  4. I absolutely love haloumi! Every so often my husband and I buy some, grill it in a pan and eat it on pita while it is still hot. The package is usually gone in 2 minutes flat!

    • The package doesn’t last long in our kitchen either, sometimes I stock up, but even then, it never lasts for long!

This is my favourite cheese also! I love the idea of using it in a cucumber salad – delicious.

  6. Wow! What a refreshing salad; perfect for a spring picnic! Looks delicious!

  7. 5 stars
Yum, I love all these flavors! Perfect for summertime!

  8. wow halloumi that is one of my favorite ingredients, difficult to find in my area and a bit expensive but when I am able to grab one it is so worth it!

    • That is the one downside of halloumi, it can be a little pricey. Trader Joe’s sometimes carries it at a reasonable price.

  9. I only recently tried halloumi and it’s safe to say… I’m in love! I like leaving it in the pan until the outside is nice and crispy, and the inside is ooey gooey! So I have GOT to try this recipe… I can taste it now! Thanks so much for the fresh idea. 🙂
