It is a perfect weeknight meal, kid-friendly, dairy-free and delicious.
This recipe is adapted from the Asian Chicken Lettuce Wraps from Joy Food Sunshine. Our family mostly stays away from peanuts so I’ve substituted the peanut butter with cashew butter, and the peanut oil with avocado oil, and a few other minor changes. Recipe Notes
Use whatever lettuce you prefer, green lettuce like Romaine is great but you can also play around with collard greens or even swiss chard! Just as long as the leaves are big enough and work for holding in the filling.
I prefer to use ground chicken for this recipe but I’ve also use ground turkey and no one complains!
This recipe uses small amounts of a variety of different sauces… I was a little overwhelmed at first at all the sauces I needed to buy, but this recipe has become part of my rotation and has been totally worth it!
Feel free to use a garnish if you want, sometimes I do spiralized carrots (using this spiralizer) but you can also do cashew pieces. It is also just fine without a garnish at all.

Ingredients
Chicken Filling
- 1 lb ground chicken (or ground turkey)
- 1 tablespoon avocado oil
- 1 small onion, minced
- 1 small green bell pepper, diced
- 1 8 oz can water chestnuts, drained
Sauce
- 3 tablespoons soy sauce (or coconut aminos)
- 3 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon cashew butter
- 1 tablespoon honey
- 2 teaspoons sweet chili sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ginger powder
Lettuce& Garnish
- 2 medium carrots, spiralized
- 1 head lettuce of choice
Instructions

In a bowl, whisk together all sauce ingredients until well combined.

In large frying pan heat up 1 tablespoon of avocado oil and then add ground chicken. Cook chicken 3-5 minutes or until it begins to brown. Add diced onions to browned chicken and cook for another 3-5 minutes or until the onions are fragrant and start to soften. Add bell peppers and water chestnuts and cook for another 3-5 minutes or until the bell peppers are tender crisp.Â

Slowly pour in sauce and mix until the chicken and veggies are evenly coated with sauce, about 3 minutes.

To serve, scoop filling into lettuce and garnish with carrots spirals.
