These simple sheet pan chicken fajitas have saved me on so many weeknights. The recipe is easy, there aren’t too much dishes, it is delicious, and it takes less than an hour to get on the table.
The ingredients are simple and basic; you will need chicken breasts, bell peppers, onion, spices like chili powder, paprika and cumin, olive oil, salt & pepper, and lime juice. Serve over tortillas with your favorite toppings like salsa, avocado, sour cream, shredded cheese and cilantro. Rice and beans make great side dishes.
To prepare the dish simply de-seed and slice the bell peppers and onions, cut the chicken into thick strips, combine with olive oil and spices over baking sheet in a preheated oven of 400 degrees. Stir once at 10 minutes in and cook for 15-20 minutes, or until the chicken is no longer pink. Set your oven on broiler setting and broil fajita filling for 1-3 minutes, or until fajitas start to slightly char. Then remove fajitas from oven and generously squeeze lime over everything, a little finishing salt and cilantro.
I like to prepare all the other toppings and set on table while the fajitas are in the oven so once they are out of the oven we are ready to eat!

Ingredients
Chicken Fajitas
- 1 1/2 lb organic chicken breasts cut into thick strips
- 3 colorful bell peppers de-seeded and cut into thin strips
- 1 small yellow onion thinly sliced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 2 teaspoon garlic powder
- 2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 2 limes, for juicing one lime is for squeezing the juice over the fajitas after they are taken out of the oven, the other lime is to be served in wedges
- 8 tortillas
Instructions

Preheat an oven to 400° Farenheit.

Arrange chicken, onion slices, bell pepper slices, seasonings and olive oil on large sheet pan or baking dish and combine well so that the olive oil and spices are evenly distributed.

Place baking sheet in the oven, and cook for 15-20 minutes, or until the chicken is no longer pink. Stir once midway through, at 10 minutes.

Set your oven to your broiler and let fajita filling continue to cook under the broiler until fajitas start to slightly char.

Remove fajitas from oven and generously squeeze the juice from one lime over the fajita filling.

Serve fajita filling over tortillas with your favorite toppings such as shredded cheese, sour cream, salsa, guacamole and hot sauce. Serve with lime wedges.

Leftovers Make Great Quesadillas
If I have left over fajita filling I simply combine with cheese on a tortilla to make quesadillas the following night for another meal that the whole family loves! Can’t go wrong.
