This makes a perfect vegetarian, vegan and gluten-free side with dinner and can be doubled, or even tripled depending on how many people you are serving.Â
Sometimes it can be hard to find delicata squash as it is a relatively short harvest season, so once I spot it I always purchase a few to enjoy. I love delicata because it is easy to prepare- simply cut into two halves length-wise, de-seed the center (I use a melon baller), and cut into about 1/2 inch slices. It is amazing roasted with a little olive oil, salt, and pepper, but I also love it with extras like pomegranate, cumin and cilantro – as I’m sharing with you in this roasted delicata squash recipe adapted from the Feast cookbook.
Ingredients for Roasted Delicata Squash Recipe with Pomegranate
Delicata Squash is a variety of winter squash that has a cylinder shape and a delicate, edible rind.
Olive Oil is used for roasting in this recipe, use a good quality extra-virgin version, I prefer first-cold pressed.
Cumin is not necessary in this recipe, but it adds a warm, earthy flavor and aroma to the roasted delicata squash recipe.
Pomegranate Seeds add a nice pop of color and flavor to this recipe. To remove seeds from pomegranate simple score around the middle and tear it open into halves. Hold one half at a time over a bowl with the seeds facing down and tap the skin with a wooden spoon, allowing the seeds to fall into the bowl.
Cilantro adds a nice distinctive taste to the dish as long as you are fan of cilantro of this polarizing herb. If not, feel free to leave out!
Flake Salt adds a textured elegance to this recipe, I love black flake salt especially.
How To Make Roasted Delicata Squash Recipe with Pomegranate
To make this recipe simply de-seed and slice the delicata squash into 1/2 inch half-rounds. Place on baking sheet and drizzle with olive oil, salt, pepper and cumin and combine. Roast at 400°F for 15-20 and serve garnished with pomegranate seeds and cilantro leaves and flaky salt to taste.

Ingredients
- 1 Delicata Squash de-seeded and cut into 1/2 inch half rounds
- 1 tablespoon olive oil extra virgin
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/4 cup pomegranate seeds
- handful cilantro leaves
- flake salt to taste
Instructions

Preheat oven to 400°F. On baking sheet combine delicata squash half rounds, olive oil, cumin and salt and roast in preheated oven or 15-20 minutes, or until golden. Toss once half way through.

Place roasted squash in serving dish and top with pomegranate seeds, cilantro leaves and flake salt.
