Loaded with vegetables and flavor, this vegan vegetable lentil soup is perfect for a chilly night at home. This healthy, vegan, gluten-free, garlicky, lemony soup is easy to make and makes great leftovers. Make this soup again and again all winter long!
I first made this soup on a whim with what I had on hand in my kitchen and ended up liking it so much I’ve been making it on repeat this winter. The flavor combo is interesting, herbes de Provence + tomatoes with green chilis, in this loaded vegetable and lentil soup. I love how satisfying and nourishing it is. This large batch makes great leftovers and tastes even better the next day!
Ingredients for Vegetable Lentil Soup
Onions, carrots, and celery is a great base for this soup. The ratio is heavy on the carrots, which pair wonderfully with lentils.
Garlic is loaded into this soup, giving the soup a ton of garlicky flavor and nutrients.
Diced and Fire Roasted Tomatoes with Green Chilis add heat and flavor to this soup.
Vegetable Broth serves as a base for the soup while also adding nutrients.
Herbes de Provence adds amazing flavor but if you have a hard time locating this spice mix you could also replace with an Italian spice blend.
Lentils are low in calories, rich in iron and folate and an excellent source of protein and add a mild earthy and nutty flavor to this soup.
How to Make this Vegetable Lentil Soup
For this straight forward soup recipe simple cook celery, onion, and carrots in olive oil for a few minutes, and then add in your garlic for another minute.
Add the rest of the ingredients, except the lemon juice. Bring to boil and then simmer, covered for about 35 minutes, or until the lentils are fully cooked.
Take off the heat, add a little lemon juice, and additional salt and pepper to taste.
Serve drizzled with olive oil. It pairs wonderfully with buttered garlic toast or a side salad.
Vegetable Lentil Soup

Ingredients
- 1 small onion, about 1 1/3 cup chopped
- 6 medium sized carrots, about 2 1/2 cups chopped into half moons
- 6 celery stalks, about 2 cups chopped
- 8 garlic cloves, about 3 T minced
- 14.5 oz diced & fire roasted organic tomatoes with green chiles can be found at Trader Joe's
- 32 oz vegetable broth
- 3 teaspoon herbes de Provence
- 1 cup uncooked lentils
- 1 teaspoon salt to taste
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoons freshly squeezed lemon juice
Instructions

Heat olive oil over medium-high heat in a large pot.

Add onions, carrots and celery and cook until onions are translucent and fragrant, about 3-5 minutes.

Add garlic and cook for an additional 1-2 minutes.

Add fire roasted tomatoes with green chilis, vegetable broth, lentils, herbs de Provence, and salt and pepper. Stir to combine.

Bring to a boil, and then reduce heat to medium-low and cover pot with lid. Simmer for 35 minutes, stirring occasionally, until the lentils are fully cooked. If too thick add up to a cup of water.

Take off heat and add freshly squeeze lemon juice. Stir to combine. Add additional salt and pepper to taste.

Drizzle a little extra olive oil on soup and serve with buttered toast or a side salad.

I’ve never seen fire roasted tomatoes in the stores here, but I see so many interesting recipes using it. This vegetable lentil soup looks like the perfect winter comfort food, and healthy too!
It adds a nice kick to the recipe! It would still be great with regular tomatoes if you can’t find fire roasted though.
