Black Bean Soup Recipe | Rainbow Delicious

I’m so excited to share this black bean soup recipe with you because I absolutely love how easy, delicious and healthy it is! My sister in law, Meg, gave me this awesome cookbook, A Year in a Vegetarian Kitchen: Easy Seasonal Dishes for Family and Friends, one year for my birthday and I am finally getting around to trying out some of the recipes. When I opened the book I could tell I would love a large percentage of the recipes, but the last few years I have been favoring mostly blogger recipes for Meal Plan Mondays and have neglected most of my cookbooks. It is one of my goals to get back into the habit of using recipes from cookbooks and sharing some of those recipes with you, adapted of course, since it is really difficult to follow a recipe exactly. I get that from my Dad.

I really appreciate recipes like this black bean soup, because there are fewer than ten ingredients, it only requires one pan (yay! less dishes!), it comes together quickly and makes great leftovers. You can enjoy it plain and simple or dress it up with lots of toppings. It is a delicious, simple recipe for this busy weeknights!

Black Bean Soup with Avocado Garnish adapted from A Year in a Vegetarian Kitchen by Jack Bishop


  • 3 T olive oil
  • 2 medium onions, finely chopped
  • 1 small red bell pepper
  • 1 small orange bell pepper
  • 5 medium garlic cloves
  • 1 T cumin
  • 2, 15 oz cans black beans
  • 3 C vegetable broth
  • 2 T balsamic vinegar
  • 1 avocado
  • salt and freshly ground pepper


  1. in a large pan saute onions and bell peppers in 3 T olive oil until softened, 8-10 minutes, over medium heat.
  2. Add garlic and cumin and cook for about two more minutes
  3. Add beans and broth and cook at medium high heat until it begins to boil. Then reduce the heat and simmer until the flavor blend, about 12 minutes.
  4. Use an immersion blender until the soup gets to your desire consistency; not completely blended but thickened.
  5. Add balsamic vinegar and simmer for a minute. Season with salt and pepper to taste.
  6. Serve with cubed avocado.


We served this soup with open faced quesadillas on the side and it was a match made in heaven!
