Who doesn’t love avocado toast? It is the perfect breakfast, lunch or even dinner in some cases. Ingredients for Avocado Egg Toast

Oroweat® Organic 22 Grains & Seeds bread is delicious, nutty, and flavorful. Therefore, it’s a perfect base for this avocado egg toast. I have been focusing on doing my small part to reduce my carbon footprint through composting, local farmers market shopping, gardening, and purchasing from companies (like Oroweat® Organic) that are focusing on sustainability in their baking!

Hard-Boiled Eggs add more protein to this recipe than your typical avocado toast. My simple method for hard boiling eggs it to place eggs in a pot and fill with water at least an inch above the eggs. Bring to a rolling boil, then take pot off the heat and cover with lid for 15 minutes. Drain, rinse with cold water, and peel once they are cold enough to handle.

Micro-Greens are an optional garnish that add a little extra freshness and antioxidants.

Salt & Pepper can be added to taste.

How to Make this Avocado Egg Toast

Making one serving of this avocado egg toast is super easy. First, simply toast a slice of Oroweat® Organic 22 Grains & Seeds bread. Next, add half an avocado onto bread slice and gently smash with a fork. Then, add hard boiled egg slices and garnish with some micro greens. That’s it!

  • 1/2 large ripe avocado pitted and scooped out
  • 2 hard boiled eggs cut into halves or thirds

Instructions

  1. Toast a slice of Oroweat® Organic 22 Grains & Seeds bread. 

  2. Add half an avocado onto bread slice and gently smash with a fork.

  3. Add hard boiled egg slices and garnish with some micro greens, salt and pepper.

    This is my go-to breakfast. I collect the eggs from my chickens and have avocado toast with egg (and usually cherry tomatoes on the side!). I use whatever greens I have on top – if I don’t have microgreens, I like baby spinach too!
