This recipe is easily adaptable depending on the ingredients you have on hand. You can use chicken breasts or thighs, whatever type of stock you have on hand (bone broth, chicken stock, or veggie stock), egg noodles or your favorite pasta shape, and whatever fresh herb you happen to have in your fridge or garden. I make this soup all the time and play around with variations often and always end up with a delicious soup! This recipe is an adaptation of the Cooking Classy Slow Cooker Chicken Noodle Soup recipe.

Slow Cooker Chicken Noodle Soup Ingredients

Chicken is the main source of protein in this recipe. I prefer to use organic free-range chicken breasts but you can also use chicken thighs.

Carrots add beta carotene and a nice pop of color in this soup.

Celery is rich in vitamins and minerals and adds a nice texture and green color.

Onion & Garlic add amazing flavor and anti-inflammatory benefits.

Dried herbs are added from the beginning to infuse flavor. An Italian blend and celery seed are recommended but you can use a blend of Italian herbs you have on hand.

Broth is an important component of this soup. Use a good quality broth but feel free to use bone broth, vegetable broth or chicken broth.

Pasta is added during the last ten minutes of cooking and you can use egg noodles or whatever pasta shape you have on hand!

Lemon Juice is added at the end of cooking and adds a little vitamin C, fresh flavor, and acidity.

Fresh Herbs In the last step add fresh herbs like chives, green onions or parsley. Feel free to get creative you could also use thyme, tarragon, sage or oregano.

How to Make Slow Cooker Chicken Noodle Soup

Best slow cooker chicken noodle soup

To make this slow cooker chicken noodle soup simply add all the ingredients to the crockpot except for lemon juice, pasta and fresh herbs.

Cook on low for 5-7 hours.

Take chicken out of the crockpot and let rest for ten minutes.

Add pasta to the crockpot and let cook.

Cut chicken into bite sized pieces and add back to the crockpot. Add lemon juice and fresh herbs.

Add salt and pepper to taste.

Ingredients

  • 2 lbs boneless chicken breasts
  • 1 onion chopped
  • 4 garlic cloves minced
  • 5 small carrots peeled and chopped
  • 5 celery sticks chopped
  • 3 tablespoons olive oil
  • 6 cups chicken bone broth
  • 1.5 cup water
  • 2 teaspoons Italian herbs
  • 1/2 teaspoon celery seed
  • salt and pepper to taste
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tabelspoons chives or other fresh herb like green onion, or parsley
  • 2 cups pasta egg noodles or shaped pasta of choice

Instructions

  1. Add chicken, onion, garlic, carrots, celery, olive oil, chicken bone broth, water, Italian herbs, celery seed, salt and pepper to your slow cooker. Give it a big stir, put the lid on and cook on low for 5-7 hours or until the chicken is fully cooked through and tender.

  2. Take chicken out of the crockpot and let rest on a cutting board for ten minutes.

  3. Add pasta to the slow cooker. Once chicken has rested for ten minutes, cut  into bite sized pieces and add back into the slow cooker.

  4. Add lemon juice and fresh herbs. Adjust salt and pepper as needed. If soup is too thick for your liking, feel free to add a little more bone broth or water.

    I love the ease of this recipe and the adaptability with different herbs. Added some Old Bay instead of the traditional salt and pepper.

    Not sure how people rate it 5 stars before they’ve actually cooked it though. Seems presumptive with comments like “going to give it a try” and “looks delicious” and “perfect for my next rainy” and “trying this soon”. Seriously, you can’t rate something before you cook and eat it.
