This week’s meal plan with five healthy crockpot recipes is perfect for those with kids that are starting school soon. This week’s menu may not be quite as healthy as some other weeks, but sometimes convenience wins the day. I hope you enjoy these five recipes.

*Note: You’ll notice that each of these recipes makes a lot of food- unless you have a large family you might want to pick just a couple and eat them as leftovers instead of doing all five!
Healthy Crockpot Recipes
Slow Cooker Chicken Fajitas from Cooking Classy
Prep Time: 15 minutes Cooke Time: 3-8 hours Total Time: 3-8 hours 15 minutes
Ingredients: chicken breasts, petite diced tomatoes with green chilies, bell peppers, onion, garlic cloves, chili powder, cumin, paprika, coriander, salt, pepper, lime juice, honey, tortillas, sour cream, cilantro, salsa, avocado, cheese.
My whole family loved these fajitas and I enjoyed the leftovers the following day. I used four bell peppers instead of three and added a couple extra garlic cloves. Mine had some extra liquid so use a slotted spoon for serving. This is my favorite of all the healthy crockpot recipes I’ve tried so far.
Broccoli Cheddar Soup from The Chic Site
Prep Time: 15 minutes Cook Time: 6-8 hours Total Time: 6-8 hours 15 minutes
Ingredients: unsalted butter, all-purpose flour, whole milk, broth, yellow onion, garlic cloves, broccoli florets, salt, black pepper, Italian seasoning, cream cheese cheddar cheese.
Broccoli cheddar soup is one of my favorite sops and I love being able to make it in a crockpot. It is great with buttered crusty bread on the side!
Cream Cheese Chicken Taquitos from Creme de La Creme
Prep Time: 15 minutes Cook Time: 4 hours Total Time: 4 hours 15 minutes
Ingredients: chicken breasts, chili powder, garlic powder, cumin, salt, pepper, cream cheese, shredded cheese, flour tortillas, cilantro, salsa, sour cream.
Taquitos are a food that usually adults and kids alike can agree on! Also, you can freeze leftovers and pop them in the oven for a quick dinner at a later date. You could easily add extra veggies or beans into these taquitos (like corn, beans, jalapenos, etc.)
Easy Crockpot Salsa Verde Chicken Tacos from Lovely Little Kitchen
Prep Time: chicken breasts, cumin, garlic powder, cream cheese, salsa verde, taco shells, lettuce, cilantro, cheese, avocado.
Talk about one of the simplest meals ever! It tastes great though and is very “green” which makes you feel good.
Slow Cooker Chili from Cooking Classy
Prep Time: 15 minutes Cook Time: 6 hours 10 minutes Total Time: 6 hours 25 minutes
Ingredients: olive oil ground beef, onion, garlic, diced tomatoes with green chilies, tomato sauce, water or broth, chli powder, cumin, paprika, cocoa powder, sugar, coriander, salt and pepper, kidney beans, toppings (cheese sour cream, avocado, cilantro, etc).
This crockpot set is similar to the set I have, which I love, especially the mini-dipper (perfect for melting chocolate for chocolate-dipped strawberries!) But there are so many other crockpots and accessories (carry bags & liners) out there that make cooking dinner a breeze so if you are a busy home cook and don’t have one yet it might be time to make the purchase!
