I’m all about adult lunch meal prep lately with school starting soon and I’m excited to share with you this week’s lunch meal prep black bean jicama salad recipe. You are going to love this flavorful, healthy and colorful lunch salad. If you are into meal prepping you might also want to check out the Greek salad lunches I shared recently.
This week’s lunch meal prep is based on the black bean jicama salad I posted on my blog previously. I make this salad often with dinner and love it so much I decided to make it for lunches too. If you want to add extra protein besides the black beans you can definitely add grilled chicken. The ingredients for this salad include romaine lettuce, corn, jicama, tomatoes, cotija cheese, radishes, black beans, and cilantro with your favorite dressing and avocados on the side to add when you are about to eat.
When I find mini avocados they are the perfect size to go with a lunch salad, but if you only can find regular avocados just cut in half and use the other half the next day (I just thinly cut off the exposed part that browns). For dressings, pick your favorite, many different dressing go good with this salad; you can make or buy a simple balsamic dressing, ranch, or the Green goddess dressing from Trader Joes is always a good choice.

Lunch Meal Prep Black Bean Jicama Salad Recipe. Make ahead at the beginning of the week to enjoy during the weekdays. Ingredients include your favorite dressing, avocado, cherry tomatoes, radishes, black beans, cotija cheese, fresh corn and cilantro over a bed of romaine lettuce. Ingredients
- 1 bunch Romaine lettuce chopped into bite sized pieces
- 1 block cotija cheese crumbled
- 1 container cherry tomatoes
- 1/2 jicama diced into small squares
- 3 ears of fresh corn cut kernels off of ears
- 1 can black beans rinsed and drained
- 1 small bunch of cilantro rinsed and chopped
- 2-3 large avocados or 5-6 mini avocados. leave whole
- your favorite dressing
- 5-6 meal prep containers for storing your salads throughout the week
Instructions

After all your ingredients are prepared, divide and layer the ingredients, starting with romaine lettuce as the base.

Divide your dressing into smaller dressing containers and add one into each salad before putting on the lids.

Refrigerate salads until you are ready to eat. If you are packing your salads to take somewhere, remember to grab an avocado or avocado half to take with you. Add avocado and dressing before enjoying.
