This black bean, radish, jicama, and avocado salad is a simple side salad full of fresh flavors.
My sister and I made this black bean, radish, jicama and avocado salad the other night and as we were throwing it together we fell in love with it. Â This salad has great texture thanks to the radishes, jicama and corn. Â I have included my basic balsamic dressing recipe that I use a lot, but you could really use almost any dressing in this salad so feel free to be creative! We ate this alongside enchiladas and it was a match made in heaven. Â I hope you enjoy this salad as much as we did!

I was looking for a way to use the jicama I picked up at the store this week. Came across this recipe. So easy to make and it’s a fun change from my regular dinner salad.
Thanks Laura!
This was a great salad to have over the hot weekend. We have some jicama leftover, so I’ll be making this again for sure!
