This black bean, radish, jicama, and avocado salad is a simple side salad full of fresh flavors.
My sister and I made this black bean, radish, jicama and avocado salad the other night and as we were throwing it together we fell in love with it. This salad has great texture thanks to the radishes, jicama and corn. I have included my basic balsamic dressing recipe that I use a lot, but you could really use almost any dressing in this salad so feel free to be creative! We ate this alongside enchiladas and it was a match made in heaven. I hope you enjoy this salad as much as we did!
Black Bean, Radish, Jicama and Avocado Salad
Ingredients
6-8 Cups Romaine Lettucebunch cilantro1 large tomato, diced1 cobb of corn, kernels cut off4 radishes, thinly sliced1 small jicama, sliced into matchsticks1/3 C crumbled cotija cheese1/2 C black beans, rinsed and drained1 avocado, diced
Balsamic Dressing
1-2 cloves garlic, minced1/4 C balsamic vinegar3/4 C olive oil1 T honeysalt & pepper to tasteDirections:
1. Rinse and Chop up Romaine Lettuce and place in salad bowl. Snip as much cilantro as desired onto the greens using kitchen scissors.
2. Toss the rest of the ingredients into the salad bowl.
3. In a separate bowl combine minced garlic, balsamic vinegar, olive oil, honey, and salt and pepper to taste. I normally put all ingredients in a small mason jar and shake it up to mix, or you can simply whisk the dressing together in a bowl.
4. Pour as much dressing as desired onto the salad and toss to combine.
5. Enjoy!
