Black Bean, Radish, Jicama and Avocado Salad

This black bean, radish, jicama, and avocado salad is a simple side salad full of fresh flavors.

My sister and I made this black bean, radish, jicama and avocado salad the other night and as we were throwing it together we fell in love with it.  This salad has great texture thanks to the radishes, jicama and corn.  I have included my basic balsamic dressing recipe that I use a lot, but you could really use almost any dressing in this salad so feel free to be creative! We ate this alongside enchiladas and it was a match made in heaven.  I hope you enjoy this salad as much as we did!

6-8 Cups Romaine Lettuce
bunch cilantro
1 large tomato, diced
1 cobb of corn, kernels cut off
4 radishes, thinly sliced
1 small jicama, sliced into matchsticks
1/3 C crumbled cotija cheese
1/2 C black beans, rinsed and drained
1 avocado, diced

 

Balsamic Dressing

1-2 cloves garlic, minced
1/4 C balsamic vinegar
3/4 C olive oil
1 T honey
salt & pepper to taste 
 

Directions:

1.  Rinse and Chop up Romaine Lettuce and place in salad bowl.  Snip as much cilantro as desired onto the greens using kitchen scissors.

2.  Toss the rest of the ingredients into the salad bowl.

3.  In a separate bowl combine minced garlic, balsamic vinegar, olive oil, honey, and salt and pepper to taste.  I normally put all ingredients in a small mason jar and shake it up to mix, or you can simply whisk the dressing together in a bowl.

4.  Pour as much dressing as desired onto the salad and toss to combine.

5.  Enjoy!
