As a mom of three kids , prepping for lunchtime can be a time consuming task. My kids change their mind a lot about what foods they deem edible and they all have different palettes and different foods they will and won’t eat. Sometimes planning and prepping their lunches sucks all the energy out of me and I’m left forgetting to make lunch for myself and end up eating whatever I can find- often not as healthy or as satisfying as I’d ideally like.
That’s where lunch meal planning comes in. I’ve started trying to plan ahead and make salads for the week for my husband and I and when I do it makes my days and weeks run much more smoothly! No more eating something sugary to hold me over until dinner or zipping through a drive-thru for a lunch I don’t even really want.
I bought a collection of lunch containers from Homegoods, but you can also order some from Amazon. I make about six-eight salads on Sunday to last throughout the week for my husband and I. Three or four for each of us seems to be the right amount to factor in days we might have lunches with friends or lunch work meetings or leftovers from dinner.
It makes me so happy to see my pre-made salads lined up in my fridge ready for the week and every day I look forward to lunch instead of trying to figure out what to eat. I don’t remember to do this every week but when I do, life is better! I will try to start sharing my lunch meal prep on the blog in case you are in the same situation of trying to stay on top of your adult lunches!
Lunch Meal Prep Greek Salad Bowl Recipe
For these Greek salad bowls all you need is containers, romaine lettuce, cucumbers, cherry tomatoes, Greek olives, red onion, feta cheese and your favorite vinaigrette. Evenly divide your ingredients between your containers and pour your dressing into individual dressing containers (these sistema ones are my go-to). Refrigerate until use.

Ingredients
- 1 bunch Romaine lettuce cut into bite-sized pieces
- 1 container cherry tomatoes
- 1 large cucumber sliced into rounds
- 1 container firm Feta cheese block sliced into cubes
- 1 container Greek olives I like to pick a variety from an olive bar
- 1/4 red onion diced
- your favorite vinaigrette dressing
Instructions

After all your ingredients are prepped (rinsed, cut) divide and layer the ingredients into your lunch containers, starting with romaine lettuce as the base.

Divide your dressing into smaller dressing containers and add one into each salad before putting on the lids.

Refrigerate salads until you are ready to eat.
