This chicken sweet potato slow cooker tortilla soup recipe is a delicious, simple and healthy comfort food for the whole family. You simply combine all of the ingredients in a crockpot and six hours later you have dinner. I don’t know why I don’t use my crockpot even more than I do, it is such an amazing shortcut to getting solid comfort food on the table. I imagine that this soup would work well in an instant pot as well. I have been meaning to try it out myself but haven’t made the time for it yet. Don’t forget the toppings because that can really make or break the meal in my house! We like to add tortilla chips, sour cream, tomatoes, cheese and avocado.
This soup makes great leftovers! You can enjoy it the next day for lunch or even freeze for a future date.

Chicken Sweet Potato Slow Cooker Tortilla Soup Recipe
This chicken sweet potato slow cooker tortilla soup recipe is a delicious, simple and healthy comfort food recipe for the whole family. You basically just combine all of the ingredients in a crockpot and six hours later you have dinner.
Ingredients
- 1.5 lb chicken breast uncut
- sweet potato rinsed, peeled and chopped into cubes
- 1 15 oz can black beans drained and rinsed
- 2 C corn can be frozen or freshly cut off the cob
- 1 onion diced
- 3 garlic cloves minced
- 3 Tbsp olive oil
- 4 C vegetable or chicken broth
- 1 14.5 can petite diced fire tomatoes
- 3-4 Tbsp taco seasoning Mix I use the Trader Joes brand
- salt and pepper to taste
Toppings
- avocado
- shredded cheese
- tomato diced
- tortilla strips or tortilla chips
- sour cream
Instructions

To the slow cooker add the chicken (left whole), sweet potato cubes, black beans (rinsed and rained), diced onion and minced garlic.

Add in olive oil, broth, petite diced fire tomatoes, taco seasoning mix, and salt and pepper to taste.

Cook and cover on low heat for 6-7 hours.

About ten minutes before you plan to eat remove cooked chicken and allow to rest 10 minutes, then dice into bite size pieces. It will start to shred as you cut, that's okay!

Taste test soup and add more seasonings, salt and pepper as desired.

Prepare toppings of choice such as tortilla strips/chips, sour cream, diced tomatoes, grated cheese and avocado.

IMHO, slow cooker is the only way to go to make a tortilla soup. I love the twist of using sweet potatoes in this one. That little sweetness would be great to offset the acid from the tomatoes.
