Chicken Sweet Potato Slow Cooker Tortilla Soup Recipe

This chicken sweet potato slow cooker tortilla soup recipe is a delicious, simple and healthy comfort food recipe for the whole family. You basically just combine all of the ingredients in a crockpot and six hours later you have dinner.

Ingredients

Toppings

  • avocado
  • shredded cheese
  • tomato diced
  • tortilla strips or tortilla chips
  • sour cream

Instructions

  1. To the slow cooker add the chicken (left whole), sweet potato cubes,  black beans (rinsed and rained), diced onion and minced garlic.

  2. Add in olive oil, broth, petite diced fire tomatoes, taco seasoning mix, and salt and pepper to taste.

  3. Cook and cover on low heat for 6-7 hours.

  4. About ten minutes before you plan to eat remove cooked chicken and allow to rest 10 minutes, then dice into bite size pieces. It will start to shred as you cut, that's okay!

  5. Taste test soup and add more seasonings, salt and pepper as desired. 

  6. Prepare toppings of choice such as tortilla strips/chips, sour cream, diced tomatoes, grated cheese and avocado.

  7. Enjoy!
