Elevate your morning routine with this lime avocado yogurt breakfast parfait. It is simple to make, includes healthy ingredients like Greek yogurt, lime, avocado, honey and granola. My kids love this breakfast parfait as much as I do, and it is a great way to sneak avocado into their diets so they can benefit from the potassium, fiber and healthy fats avocado has to offer.
For this lime avocado yogurt breakfast parfait recipe you will need 2 cups full fat Greek yogurt, 1 large ripe avocado, 2 limes juiced, 2 teaspoons of lime zest (divided), 2 tablespoons of raw honey plus more for drizzling, and your favorite granola- Sprouts has a delicious flax and pumpkin seed granola of you could use my homemade granola recipe.
Simply add the Greek yogurt, avocado, lime juice, 1 teaspoon of lime zest and honey in a blender until smooth. Then, layer your favorite granola with the yogurt mixture, and garnish with a drizzle of honey and lime zest. It makes 6 small parfaits. We make layered breakfast parfaits with granola, plain yogurt, frozen berries and honey often, but it is nice to switch things up every once in a while, and we love the zesty lime kick in this parfait.
You could try a lemon variation by substituting the lime with lemon zest and lemon juice.

This recipe makes 4-6 small parfaits

Add the Greek yogurt, peeled and de-pitted avocado, lime juice, 1 teaspoon of lime zest and honey in a blender until smooth. This step can be done a few hours in advance, chill until ready to layer parfaits.

Layer the avocado yogurt with the granola and top with a the reserved lime zest and a drizzle of honey.

Serve immediately and enjoy.

For the nutrition label I used Nature's Path organic flax plus vanilla granola. and the servings are based on 1 out of 6 total parfaits.
