I always get so excited for fig season, don’t you? If you are a fig-lover I have a whole round up of fig recipes and today I’m excited to share one of my own recipes- this peach, blackberry and fresh fig salad with grilled chicken. It is super fresh, easy to put together and delicious! I used butter lettuce (a personal fave!) but you could really use whatever greens you want- arugula or baby greens would also be great choices. To top off this fresh, perfect-for-summer salad I added silvered almonds (these ones from Trader Joes) and feta cheese, but goat cheese would also be wonderful.
For the salad dressing I recommend using your favorite simple vinaigrette, store bought or homemade. My go-to salad dressing lately is to combine equal parts of this basil olive oil with this blackberry vinegar. Simple and so delicious I pretty much want to drink it plain.

PEACH, BLACKBERRY AND FRESH FIG SALAD WITH GRILLED CHICKEN
This peach, blackberry and fresh fig salad with grilled chicken, almonds and feta is the perfect summer salad! Bring to your next potluck or next time you host a summer dinner with friends.
Ingredients
- 1 lb chicken breast
- salt & freshly ground pepper
- 4-5 figs sliced
- 2 peaches rinsed and sliced into bite size pieces
- 1 package blackberries rinsed
- 1/3 C sliced almonds
- 2 oz feta cheese
- 1 head butter lettuce rinsed and sliced into bit sized pieces
- simple balsamic dressing
Instructions

Rub chicken with salt and pepper and cook on a medium-high heated grill until cooked through.

Take chicken off of grill and let rest on a plate covered in foil while you prepare the rest of the salad.

To prepare salad add butter lettuce, figs, blackberries, peach slices, almonds and feta to serving platter or bowl.

Cut chicken into pieces and top salad with grilled chicken pieces.

Dress salad using a simple vinaigrette.

I LOVE figs! And I also love fruit in salads. My favorite way to eat figs is on pizza, but I’m loving the flavors in this salad.
