Healthy Spring Recipes Meal Plan from Healthy Seasonal Recipes

Today I have a delicious and healthy spring recipes meal plan from Healthy Seasonal Recipes that I’m very excited to share with you! It really starting to feel like Spring now with the rain showers, Passover and Easter celebrations, and all of the spring blossoms- our orange tree has the most amazing smelling blossoms right now!

This week’s menu from Katie at Healthy Seasonal Recipes includes three fresh salads, a carrot ginger soup and creamy chicken with peas. Enjoy and have a wonderful week!

I’d love to introduce you to Katie and how she became interested in cooking in her own words before you scroll down to her mouthwatering recipes:

“My mom is a really awesome cook, and her mom was a really great cook, so I started cooking really young and didn’t think much of it. As a kid I didn’t think of it as a career because I wanted to be a photographer. In college, I majored in art. But the cooking remained a constant, for work during and after college, I found myself cooking in restaurants and catering. Eventually I went to culinary school. A few years after graduating, and deciding that restaurant life was not for me, landed a job working in the EatingWell test kitchen as a recipe tester and food stylist. That’s how I learned how to develop recipes. After having kids, and struggling with working full time outside of the home, I went part time at the Test Kitchen and started Healthy Seasonal Recipes. I hoped that some day I would be able to write a cookbook and I wanted to create a space of my own, doing my profession. As it turned out, I loved being able to use my photography and recipe development skills together to inspire home cooks to make meals from scratch with locally sourced ingredients. Today I continue with my blog, I develop recipes, photography and videos for food brands for their online content needs and I also contribute recipes to magazines like Parents and Fitness. In 2015, I wrote a cookbook called Maple, 100 Sweet and Savory Recipes Featuring Pure Maple Syrup published by Quirk Books. In my spare time I love to garden, work out, laugh with friends, shop and pin on Pinterest.

Healthy Spring Recipes Meal Plan from Healthy Seasonal Recipes- snap pea mint and feta fattoush saladSnap Pea Mint and Feta Fattoush Salad

Prep Time: 20 minutes  Total Time: 30 minutes

Ingredients: whole wheat pita, olive oil, sumac, greens, mint, snap peas, radishes, English cucumber, red onion, lemon, honey, oregano, salt, ground pepper, feta, olives.

This vegetarian salad is filled with fresh ingredients like mint, cucumber and radishes which pairs well with olives and feta.

Prep Time: 40 minutes Total Time: 1 hour

Ingredients: olive oil, apples, onion, carrots, celery, ginger, thyme, salt, pepper, vegetable broth, apple cider vinegar, garlic, whole grain crusty bread.

This soup combines carrots, apples and ginger and is topped with delicious homemade oregano croutons! Perfect for your next rainy Spring day.

Prep Time: 15 minutes Total Time: 15 minutes

Ingredients: garlic, salt, olive oil, lime juice, maple syrup, cumin, chipotle chili powder, lacinato kale, black beans, jicama, corn, carrots, hard boiled eggs, bacon, Queso Fresco, cilantro.

Cobb salads are my favorite, it is often my go-to order at restaurants. There are so many variations and I pretty much like them all. I love the addition of jicama to this Southwestern version.

Prep Time: 18 minutes Total Time: 18 minutes

Ingredients: olive oil, chicken breast, salt, flour, broth, sweet peas, sour cream, chives, ground pepper.

This is such a simple and quick weeknight meal. You can serve this over rice, egg noodles, quinoa or whatever sounds good to you!

Healthy Spring Recipes Meal Plan from Healthy Seasonal Recipes- kale salad with blueberries manchego pumpkin seed clusterskale Salad with Blueberries, Manchego and Pumpkin Seed Clusters

Prep Time: 25 minutes Total Time: 40 minutes

Ingredients: pumpkin seeds, honey, cinnamon, chipotle power, kale, lemon juice, blueberries, Manchego, ground pepper.

Pumpkin seed clusters are the star of this salad and taste delicious paired with fresh blueberries and Manchego cheese (which you can sub with any domestic hard sheep cheese if you have a hard time locating it).
