This week I’m happy to share an easy vegan recipes meal plan from Rough Measures blog. While I don’t follow any diet strictly, I try to incorporate whole foods into my day and often enjoy plant-based recipes like the five featured this week. Rough Measures is a whole foods, plant-based vegetarian recipe blog with plenty of vegan and gluten free options as well. Sus, the creator of the blog, loves to create meals to nourish and lift her mood.

Easy Vegan Recipes Meal Plan: Rough Measures
Prep Time: 10 minutes Cook Time: 50 minutes Total Time: 1 hour
Ingredients: olive oil, shallots, garlic cloves, beetroot, carrots, sweet potato, bay leaves, thyme, tomato puree, harissa, vegetable stock, pearl barley, pearl barley, optional, red wine.
This is a hearty meal and a great way to enjoy beets! This recipe is great paired with some crusty bread. Red wine is optional- it is missing from the grocery list so make a note for that.
Ingredients: carrots, agave or honey, cumin seeds, fennel seeds, cucumber, tomatoes, red onion, red chilli, limes, thai basil, desiccated coconut, olive oil, kaffir lime leaves, turmeric, onion, cashews.
This recipe has some unique flavors going on! Thai basil is a delicious variation of basil (one of my faves!) but if you can’t find it you can make substitutions with regular basil.
Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes
Ingredients: tomatoes, garlic cloves, cannellini beans, basil, red wine vinegar, balsamic vinegar, olive oil.
This is such a quick recipe to throw together! Filling, simple, and delicious.
Asian Kale Salad with Ginger Dressing
Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 15 minutes
Ingredients: kale, red cabbage, carrot, spring onions, lime, peanuts, sesame seeds, ginger, garlic, olive oil, tamari or soy sauce, rice wine vinegar, lime.
It feels kind of funny to massage your kale, but I promise it makes a difference so don’t skip this step!
Beetroot and Orange Salad with Creamy Mint Dressing
Prep Time: 20 minutes Cook Time: 45 minutes Total Time: 1 hour 5 minutes
Ingredients: beets, oranges, dressing, cashew butter, olive oil, lemon, apple cider, mint, maple syrup.
This recipe is gluten free as well as gluten. The flavor combination of beets, citrus and mints is refreshing.
