This cowboy caviar is the perfect dip to enjoy with tortilla chips. Loaded with fresh ingredients including corn, avocado, tomatoes, cilantro, and black eyed peas, it makes a great appetizer or game day snack.
I first tried this dip paired with tortilla chips years ago on a family trip to Arizona. It is one of those dips that once you start, you can’t stop until the bowl is gone! The flavors are so fresh, it has a perfect combo of textures, the red wine vinegar dressing gives it a punch. It is best to enjoy within a day or two of making, before the fresh avocado browns too much for oxidation.
Ingredients for Cowboy Caviar
corn adds a nice crunch. I used fresh corn, but you can also substitute with canned corn when it is not corn season.
garlic minced adds a nice flavor base.
tomato cut into bite-sized chunks. I used an heirloom tomato from my garden.
green chiles drained and added for some subtle sweet and smokey flavor. I like to purchase the Fire Roasted Diced Green Chilies from Trader Joe’s.
black eyed peas which are actually beans, have a nice earthy flavor. If you don’t like black eyed peas or can’t locate this variety, you can also substitute with black beans.
cilantro adds a ton of flavor!
avocado is added for creaminess, make sure to use avocados that are ripe.
dressing is made of salt, pepper, cumin, olive oil and red wine vinegar.
How to Make Cowboy Caviar
First, prepare ingredients by cutting corn off the cob, mincing the garlic, cutting the tomato, rinsing and draining black eyed peas, draining green chiles, rinsing and chopping cilantro, cubing the avocado, and measuring the dressing ingredients.
Add all ingredients to a large bowl and mix to combine. Chill until you serve, this dip is best served fresh and eaten within a day or two. Serve with tortilla chips.

- 1 cob corn kernels cut off of the cob
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 4 oz can green chilies drained
- 1 teaspoon cumin
- 3/4 teaspoon salt
- 1/4 cup olive oil
- 1 can black eyed peas drained and rinsed
- 1 bunch cilantro leaves, chopped
- 2 avocados cut into bite sized chunks
- 1/8 teaspoon pepper
- 1/4 cup red wine vinegar
