This avocado Caprese salad recipe combines halved grape tomatoes, fresh mozzarella, avocado, basil chiffonades, aged balsamic, and extra virgin olive oil for the perfect summer lunch or side dish. This recipe is easy to make, vegetarian, and full for flavor.
Ingredients for Avocado Caprese Salad Recipe
Grape Tomatoes are sliced into halves, so you get some tomato in every bite. You can also use halved cherry tomatoes or bite sized chunks from larger heirloom tomatoes. For tomatoes, home grown or farmer’s market tomatoes are always best!
Fresh Mozzarella can be cut up into bite sized pieces, or you could use small ovalini shaped mozzarella. You want to buy mozzarella from a brand you can trust, and get the fresh kind that is submerged in liquid.
Avocado is cut into bit sized chunks and adds an additional creaminess and pop of color to what is otherwise a pretty traditional Caprese salad.
Fresh Basil chiffonades add a ton of flavor. To chiffonade, place rinsed basil leaves on top of each other one by one, then roll the leaves from end to end, and thinly slice into ribbons.
Extra Virgin Olive Oil & Aged Balsamic Vinegar combine to make a simple and perfect dressing for this salad. Make sure to use good quality versions of both!
