Someone brought this recipe to a recent BBQ and I couldn’t stop going back for more servings! It is one of those side dishes that is nourishing, flavorful and light all at once. With ingredients like zucchini, chickpeas, feta, olives, artichokes, tomato and red onions you really can’t go wrong! The dressing really ties it all together. The recipe is originally from cleaneating.com and is one of those recipes you will make again and again!
Mediterranean Spiralized Zucchini Salad Ingredients
Zucchini spirals can be made using a spiralizer, but if you don’t have a spiralizer you can also just use a potato peeler to make thin zucchini ribbons. Some stores, like Whole Foods, also sell pre-made zucchini spirals.
Red Onion is a crunchy, flavorful addition to this salad.
Artichoke Hearts are a delightful and meaty addition to this vegetarian dish.
Chickpeas are a filling source of protein and fiber.
Kalamata Olives add a distinctive flavor to this Mediterranean style dish.
Feta Cheese is a perfectly paired salty and tangy cheese for this salad.
Unsalted Diced Tomatoes are perfect in this recipe, although I forgot to add them to the ingredients shot above 😉
Dressing made from extra virgin olive oil, red wine vinegar, lemon juice, dried herbs, garlic powder, Dijon, pepper, and salt completes the whole recipe!
Directions
First, spiralize the zucchini. Pat zucchini dry with paper towel and set aside.
For dressing, whisk together extra virgin olive oil, red wine vinegar, dried herbs, Dijon mustard, garlic powder, salt, and pepper to a small bowl.
Finally, add all ingredients to large bowl, top with dressing and mix in dressing just before serving.

Ingredients
- 2 zucchini spiralized or cut thinly using a potato peeler
- 1/2 red onion thinly sliced
- 12 oz quartered artichoke hearts drained
- 1 cup cooked chickpeas drained and rinsed
- 1/2 cup pitted kalamata olives halved
- 1/2 cup feta cheese crumbled
- 14 oz unsalted diced tomatoes drained
For Dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions

Pat dry zucchini noodles with a paper towel, to help absorb moisture. Set aside.

Made dressing by combining olive oil, red wine vinegar, lemon juice, oregano, parsley, Dijon, garlic powder, salt and pepper in a small bowl with whisk until fully combined.

In a large bowl add all ingredients except for the dressing.

Right before you are ready to enjoy, pour dressing over salad, combine, and serve.
