Time for tacos! I hope you love tacos as much as my family and I do… which is A LOT.
My brother, Steven, and his wife, Jamie, unfortunately live all the way in North Carolina. And especially around this time of year, during the holiday season, I miss them and their three munchkins (one of which I haven’t even met yet, sad face) a lot. Besides reading Jamie’s amazing blog, The Bright Light Forever Feeling, on motherhood and life hacks, one way I try to feel connected to them long-distance is by cooking by brother’s famous and delicious taco recipe- chili, garlic & lime chicken tacos on white tortillas served with tomatoes, onions, cilantro, salsa verde and queso fresco. Steve and Jamie make these tacos every Tuesday with their cute family (see pics below) and I think I may need to adopt the same tradition because they are relatively simple to put together and yet AMAZINGLY delicious.
Steven explained their family tradition recipe using phrases like “a little bit of this,” and “more than you would think of that,” so I did my best to quantify the ingredients, but this is definitely one of those recipes that you can adapt to your taste by adding more or less spices, lime, toppings, etc. I hope your family enjoys these tacos as much as we do and that you get a chance to make these for a Taco Tuesday soon!

Chili, Garlic and Lime Chicken Tacos with Cilantro and Queso Fresco
The best chicken tacos! Chili, garlic & lime chicken tacos on white tortillas served with tomatoes, onions, cilantro, salsa verde and queso fresco. These are a perfect weeknight family meal.
Ingredients
- chicken breasts 2 large
- chili powder 1/2 T - 1 T
- garlic powder 1/2 t
- white corn tortillas 10-12
- olive oil 3 T
- sea salt
- vine ripened tomatoes 2 cubed
- cilantro 1 small bunch
- onion 1 small
- limes 2 large
- sour cream optional
- salsa verde 1 jar
- queso fresco crumbled
Instructions

prepare cilantro-onion-lime topping by combining roughly chopped cilantro leaves (I use my kitchen scissors for cilantro), and finely chopped white onion. Squeeze half of a fresh lime over the top and set aside.

cook your chicken breasts by either grilling or sauteing on stove in olive oil until fully cooked through.

cube cooked chicken

heat olive oil in a frying pan and add garlic powder, and chili powder, (start with 1/2 T and work your way up to 1 T if desired, to taste). Mix in cubed chicken and saute for a few minutes.

Squeeze half of a fresh lime over the chicken. Cook for a minute or so longer, add salt to taste and then take off the heat.

Prepare White Tortillas by brushing them with a little olive oil, sprinkling with sea salt and placing in the oven with the broil setting on. Keep a close eye on the tortillas and only keep in the oven for up to a few minute; once they start bubbling and just barely browning they are done.

Assemble the tacos by putting a spoonful of chicken, cilantro-onion topping, tomatoes, queso fresco and salsa verde on a tortilla. Serve with lime wedges.

Definitely a hit at my house! We used warm butter tortillas instead of corn and they were awesome! Paired with black beans and spring salad on the side.
