For those of you really trying to eat healthy this year, you will love this week’s Monday meal plan! It features five healthy dinner recipes from Lively Table, which is written by Kaleigh McMordie, MCN, RDN. She is awesome, passionate about nutrition and has a beautiful blog that I highly recommend. Here is a little intro from Kaleigh in her own words so you can get to know her a little better before trying out some of her recipes this week:
“I’m a registered dietitian in Lubbock, Texas. I have always been very passionate about nutrition and cooking. I grew up in a large family where everyone was always cooking and laughing and having a good time around a great meal. I am a strong believer in the power of food to bring people together, and I also believe that healthy food should taste great and nourish both the body and the soul. I love yoga, the beach and good wine. I love to bake my own sourdough bread and can my own jam. My husband and I have 3 Brittany Spaniels! Healthy Dinner Recipes from Lively Table
Total Time: 30 minutes
Ingredients: quinoa, garlic, onion, vegetable stock, olive oil, oregano, salt and pepper, red bell pepper, red onion, cucumber, chickpeas, baby spinach, grape tomatoes, black/kalamata olives, tzatziki sauce or hummus.
This is a fresh and filling dinner option but is also great for lunches. You could divide it up into portions and take to work or have on hand for a quick pre-made meal.
Pecan Crusted Goat Cheese Citrus Salad
Total Time: 15 minutes
Ingredients: blood orange, cara cara orange, navel orange, grapefruit, spring mix lettuce, red onion, goat cheese, chopped pecans, blood orange juice, olive oil, red wine vinegar, honey, salt, pepper.
This salad is so gorgeous! If you can’t get your hands on all the varieties of citrus just use what you can and it will still be amazing!
Ingredients: olive oil, onions, garlic, whole wheat flour, red wine, beef broth, Worcestershire sauce, balsamic vinegar, bay leaf, thyme sprigs, sea salt, black pepper, sourdough baguette, gruyere cheese.
French onion soup is one of my very favorite soups- it is so comforting and cheese and delicious. You can use gruyere or swiss cheese, sometimes it can be difficult/expensive to get gruyere.
Total Time: 15 minutes
Ingredients: kale, red onion, parmesan, sourdough bread, olive oil, garlic powder. Caesar dressing (nonfat greek yogurt, egg, garlic, dijon, Worcestershire, lemon juice, black pepper, parmesan, olive oil.)
You can never go wrong with a good caesar salad! You can make the dressing as the recipe outlines or purchase your favorite pre-made dressing. Same things goes for the croutons. I like to add some grape/cherry tomatoes and chicken to my salad.
Blackberry Chicken Flatbread Pizza
Ingredients: wholegrain flatbread crust, olive oil, burrata or fresh mozzarella, red onion, fennel, grilled chicken, blackberries, balsamic reduction.
Blackberry, fennel and mozzarella= an amazing flavor profile! This is a pizza that you can adjust to your liking- if you want it to be vegetarian just leave out the chicken, if you like pizza dough instead of flatbread then substitute that. This would taste amazing paired with the citrus salad.
