Happy Monday! For this week’s meal plan Monday I’m thrilled to share five meal ideas and grocery list with A Cookie Named Desire. This stunning blog created by Amanda Powell features mostly baked goods, but she has a handful of delicious dinner recipes too which I highlighted in this week’s meal plan and I hope you enjoy! Amanda started cooking and baking when she moved to London for university. She discovered that she has an aptitude for flavor development and a passion for food science, especially as it applies to baking and desserts. She believes in living life sweetly, doing things that make you happy and spreading happiness to people. She finds that a nice comforting cookie and hot chocolate in winter or a creamy, unique ice cream cone in the summer is the perfect way to bring a smile to just about everyone’s face. While she love sweets, she also believes in eating them moderately and enjoying a wholesome homemade meal. In the summer, she loves growing her own fruits and vegetables. This has also led her to start teaching children how to grow their own gardens in pots they can keep in their homes so they can learn where their food comes from and spark an interest in eating fresh, nutritious ingredients.

Meal Ideas and Grocery List with Cookie Named Desire
Shashuka from A Cookie Named Desire
Prep Time: 25 minutes Cook Time: 20 minutes Total Time: 45 minutes
Ingredients: olive oil, smoked paprika, cumin, crushed red pepper, sweet onion, garlic, eggplant, poblano peppers, portobello mushrooms, can crushed tomatoes, eggs, salt and pepper.
My sister recently made shashuka for me and it was love at first bite! If you haven’t tried this savory and filling healthy dish then I hope you give it a chance! You can play around with the vegetables you use inside (if eggplant is not your thing, don’t worry! just add more peppers and onions or zucchini). I love to top it with fresh cilantro. I prefer to use a good cast iron skillet for this dish.
Seared Chicken Sweet Potato Mash from A Cookie Named Desire
Prep Time: 20 minutes Cook Time: 30 minutes Total Time: 50 minutes
Ingredients: sweet potatoes, yellow onion, parsley, piave cheese (or Parmigiano-Reggiano), balsamic vinegar, chicken breasts, flour, butter, maple syrup.
I love that this recipe includes less than ten ingredients and is filling and flavorful. If you can’t find Piave cheese you can substitute parmigiano-reggiano cheese.
Taco Soup Recipe from A Cookie Named Desire
Prep Time: 30 minutes Cook Time: 45 minutes Total Time: 1 hour 15 minutes
Ingredients: chicken breast, taco seasoning, olive oil, onion, garlic, flour, milk, cheddar, corn, black beans, fire roasted tomatoes, broth, salt and pepper.
With this cold weather I am constantly craving soups, are you? This taco soup recipe has all the best flavors of tacos swirled together in this comforting soup. You can top with whatever you want, we love tortilla chips, sour cream, cilantro and avocado.
Cheesy Turkey Stuffed Peppers from A Cookie Named Desire
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Ingredients: bell peppers, grains (rice or quinoa), broth, olive oil, onion, garlic, ground turkey, petite diced tomatoes, salt and pepper, crushed red pepper, dried oregano, basil, shredded cheese.
Stuffed Peppers are always a good idea! If you want to make these vegetarian you could substitute beans for ground turkey.
Black Bean Burgers from A Cookie Named Desire
Ingredients: black beans, lime zest, garlic, red onion, chipotle pepper powder, adobo sauce, salt, pepper, egg, olive oil, portebello mushroom caps, sharp cheddar, burger buns.
Don’t get me wrong, sometimes I crave a nice juicy hamburger, but other times I honestly would rather a vegetarian burger like this black bean burger! It is filling, full of flavor and you can have fun with toppings (caramelized onions and avocado are my fave!)
