Neapolitan Ice Cream

This no-churn, egg-free, Neapolitan ice cream recipe can be made without an ice cream maker and is a delicious triple layered dessert that the whole family will love!

Neapolitan Ice Cream Recipe Rainbow Delicious

The strawberry, vanilla and chocolate layers are made with a combination of sweetened condensed milk, heavy whipping cream, sugar, and flavorings.

This Neapolitan ice cream recipe is made in two loaf pans lined with plastic wrap.

All three ice cream flavors (chocolate, vanilla and strawberry) are delicious on their own, but are really amazing served together in this layered Neapolitan ice cream dessert.

Neapolitan Ice Cream Ingredients Overview

These are the ingredients needed to make two loaf pans, which makes 20 slices total. You can also halve the ingredients and make just one loaf pan.

Cream You’ll need full fat plain whipping cream for this recipe. It should be un-whipped and you will need 6 cups, 2 cups for each flavor. You will whip the cream and divide it before you add it to each flavor concentrate.

Sweetened condensed milk is combined with each layer’s flavors and then with the cream to make this delicious Neapolitan ice cream. You’ll need 3 13 oz cans for this recipe.

Strawberries & Sugar are used in the strawberry layer. The strawberries and sugar are roasted to bring out their flavor and get rid of some of the moisture content and avoid iciness in the strawberry layer. Before roasting strawberries should be hulled and quartered. You’ll need 2 pounds of strawberries and 1 tablespoon of white sugar.

Unsweetened Cocoa Powder is used for flavoring the chocolate layer. You’ll need 3 tablespoons.

Vanilla adds extra flavor to each of the layers. You’ll need 5 teaspoons total, 1 teaspoon for strawberry layer and 2 teaspoons for the each of the chocolate and vanilla layers.

Sea Salt is added to the vanilla and chocolate layers. You’ll need 1/2 teaspoon.

Neapolitan Ice Cream Ingredients & Instructions

Supplies needed include loaf pan, plastic wrap, immersion blender, and baking tray.

Cream Mixture

This cream mixture will be folded in with the three flavors later.

6 cups cream (3 pints)

Instructions

Add 6 cups cream to a very large bowl. Use electric beater or hand held blender and while until stiff peaks form. Cover and refrigerate the cream base until needed.

Strawberry Flavor Concentrate

The strawberry ice cream layer is especially flavorful, as the strawberries are roasted first to reduce iciness and add extra depth of flavor. If you are in a hurry and don’t want to roast the strawberries you can skip this step but the strawberry layer might be a little more icy and have a less intense flavor… it will still be delicious though!

First, you’ll roast the strawberries. Even though the is the last concentrate you will need, I start making it first because it is the most labor intensive and time consuming. 

Ingredients
2 lbs ripe strawberries, hulled and quartered
1 tablespoon white sugar
1 teaspoon vanilla extract
1 can sweetened condensed milk

Instructions

Preheat the oven to 325F. Add strawberries and sugar on baking tray and toss. to coat strawberries with sugar

Roast for 30 minutes, rotating tray at the 15 minute mark to toss strawberries. 

Roasted Strawberries for Neapolitan Ice Cream Recipes

Remove strawberries from oven and scrape strawberries into a bowl. 

Add sweetened condensed milk and vanilla to strawberries and beat well with immersion blender to make strawberry base. Refrigerate until needed.

Mixing Strawberry Flavor for Neapolitan Ice Cream

Chocolate Flavor Concentrate

Ingredients
3 tablespoons unsweetened cocoa powder
1 can sweetened condensed milk
2 teaspoon vanilla extract
1/4 teaspoon sea salt

Mixing Chocolate Flavor for Neapolitan Ice Cream

Instructions

Combine ingredients in a bowl with an immersion blender. Refrigerate until needed.

Vanilla Flavor Concentrate

Ingredients
1 can sweetened condensed milk
2 teaspoons vanilla extract
1/4 teaspoon sea salt

Instructions

Combine ingredients in a bowl with an immersion blender.Refrigerate until needed.

Combine Cream Mixture with Flavor Concentrates

Flavor Concentrates Neapolitan Ice Cream

Remove concentrates from refrigerator and divide cream among the three flavors. Combine by gently folding in 1/3 of the cream mixture with the chocolate concentrate, 1/3 of the cream mixture with the vanilla concentrate, and 1/3 of the cream with the strawberry concentrate. 

Once you have combined each flavor concentrate with cream you are ready to make your layers. Keep ice cream mixtures covered and chilled until it is their time to freeze.

Assembling Layers

Line two 8 inch loaf pans with plastic wrap. This makes it easier to remove the ice cream from the pan later on.

Divide and pour the chocolate ice cream mixture between the two lined loaf pans.

Cover and freeze the chocolate layer of ice cream until they are frozen enough to pour the next layer without too much mixing*. Depending on your freezer that could be between 1-4 hours. 

Once the chocolate layer has had time to freeze, divide and pour the vanilla ice cream mixture between the two lined loaf pans. Cover and freeze the ice cream layers until they are frozen enough to pour the final layer without too much mixing, about 1-4 hours.

Vanilla Layer Neapolitan Ice Cream

Divide and pour the strawberry ice cream mixture between the two lined loaf pan. Cover and freeze the ice cream layers until fully frozen. After the final layer is poured I like to freeze the ice cream overnight for best results, but at minimum 5 hours.

Strawberry Layer Neapolitan Ice Cream

When the ice cream is fully frozen and you are ready to serve, remove from freezer and turn ice cream block onto a cutting board. 

At this point you may want to allow ice cream to thaw and soften for 2 to 5 minutes so it is easier to cut.

Serving

Slicing Neapolitan Ice Cream

Using a large knife carefully cut the ice cream into slice and serve!

*If you don’t mind the look of a little bit of mixing between the layer then less time in the freezer is okay. If you want a very distinct and clean line between each layer than freeze until layer is very firm before adding the next layer.
