Layered Strawberry Cake with Fresh Whipped Cream

You’’ll want to make this layered strawberry cake with fresh whipped cream all summer long. This easy homemade recipe is made from scratch and a family favorite.

Ingredients for Strawberry Cake

You’ll need basic kitchen baking items plus fresh, sweet, farmer’s market strawberries to make this delicious seasonal cake.
Basic Baking Ingredients for Cake Layers include butter, all-purpose flour, baking powder, salt, sugar, eggs, vanilla and whole milk.
For Strawberry Filling you’ll need fresh farmer’s market or garden strawberries mixed with a little sugar. It is important the strawberries they are ripe, sweet and juicy; they are the star of this dessert!
For Whipped Cream Layer you simply whip up heavy cream, a little powdered sugar, and a pinch of salt. You could fold in a little gelatin if you are making this cake ahead of time, but I never do because this delicious cake never lasts that long in my house!

How To Make Strawberry Cake

Making this cake involves three main steps. First, you bake the two cake layers. Second, You make the strawberry and whipped cream fillings. Lastly, you assemble the cake! It is pretty straight forward, and the presentation is rustic and forgiving.

Before you bake the cake you will prepare two 8 inch round pans with butter, flour and parchment paper and preheat your oven to 350F.

You’ll mix up the cake ingredients until just combined and divide between the two pans to bake until toothpick inserted in the center of the cakes come out clean. Let cakes cool for about 10 minutes in the pan, and then invert onto wire rakes to complete cooling.

Meanwhile prepare the strawberry filling and whipped cream. Combine  strawberry slices with sugar in a large bowl and set aside.strawberry cake filling

Beat cream, powdered sugar and a pinch of salt until soft peaks form. Keep these toppings chilled until you assemble cake.

To assemble the cake put one cake on serving platter and arrange half of the strawberries on it. Top with half of whipped cream, leaving an inch boarder. Gently place the second cake on top. Top with the remaining whipped cream, again leaving an inch border. Just before serving, spoon the rest of the strawberries over the cake.

Ingredients

For Cake Layers

  • 1/2 cup butter, at room temperature plus more for greasing cake pans
  • 1 1/2 cups all-purpose flour plus more for pans
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 4 large eggs two whole eggs, and two egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whole milk

For Filling

  • 1 pound strawberries hulled and thinly sliced
  • 1/4 cup sugar
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • pinch of salt

Instructions

For Cake

  1. Preheat oven to 350F. Butter bottom of two 8-inch round cake pans and line with parchment paper. Butter and flour the parchment paper and pan sides. In a medium bowl, whisk together flour, baking powder, and salt; set aside.

  2. Beat butter and 1/2 cup sugar on high speed in a large bowl until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition. Beat in vanilla. Switch mixer to low setting. Add 1/2 cup flour mixture, then 1/4 cup milk, 1 /2 cup flour, 1/4 cup milk, and finally the last 1/2 cup flour. Mix until just combined, do not overmix.

  3. Divide batter between two prepared pans.

  4. Bake until a toothpick inserted in center of cake comes out clean, about 13-15 minutes. Let cakes cool in pans for about 10 minutes and then invert onto wire racks to finish cooling.

Filling & Topping

  1. Combine strawberries and 1/4 cup sugar in a large bowl. Set aside.

  2. Beat cream, 1/4 cup powdered sugar, and pinch of salt with an electric mixer until soft peaks form.

Assemble Cake

  1. Put one cake on serving platter and arrange half of strawberries on it.

    • Hi Steven, this cake is best eaten the day it is made. It should last a day or two in the fridge, but will lose some freshness.
