Veggie Tater Nachos with Roasted Cauliflower and Green Onions

When I want to make a snack I know everyone will love, one trick up my sleeve is to add McCain©’s Potato and Cauliflower Veggie Taters™. They are a better option than traditional tater tots because they are made with real vegetables, with the addition of veggies and cheese to the traditional potato base. These veggie taters pair wonderfully with roasted cauliflower and traditional nacho toppings for this simple snack concept.

Roasted Cauliflower is simple to make by simply drizzling with olive oil and a pinch of salt and pepper.

Cheese! Because no nachos are complete without some melted, delicious cheese! I like to use cheddar for this, but any melty cheese will do—feel free to be creative!

Bacon is a perfect topping for this simple recipe. A simple way to make bacon crumbles is to bake the bacon in the oven on a foil-lined baking sheet.

Sour Cream is an optional topping for this. I like to use full-fat sour cream.

Green Onions add a nice finishing touch to this dish, adding vibrancy and a nice flavor.

This recipe is so simple! First, roast the cauliflower that has been drizzled in olive oil with salt and pepper. Bake the bacon on a baking sheet until crispy and let cool on a paper towel-lined plate. Once cool, crumble into smaller pieces. Cook veggie taters according to package instructions for 8 minutes at 425°F. Combine the cooked veggie taters and roasted cauliflower to one baking sheet and sprinkle generously with shredded cheese. Broil in oven for 3 minutes or until cheese is starting to melt and bubble. Remove from oven and top with dollops of sour, sliced green onions, and bacon crumbles.

Ingredients

  • 1 small head cauliflower
  • 4 slices bacon
  • 1 package Potato and Cauliflower Veggie Taters TM
  • 6-8 oz shredded cheese
  • sour cream
  • green onions sliced

Instructions

  1. Preheat oven to 400°F. 

  2. Chop cauliflower into bite-sized pieces. Drizzle with olive oil, salt, and pepper and toss to combine. Transfer to baking sheet in an even layer and roast until some pieces are starting to brown and the cauliflower is fork tender, about 25-30 minutes. Stir once halfway through.

  3. While the cauliflower is starting to roast, line another rimmed baking sheet with foil and place 4 slices of bacon in a single layer, without overlapping. 

  4. Add to the oven with the cauliflower and bake until crispy, 15-20 minutes. If you add the bacon sheet into the oven ten minutes after the cauliflower starts roasting, the bacon and cauliflower should be done at around the same time.

  5. Transfer cooked bacon to a paper towel-lined plate using tongs. Once cooled enough to touch, crumble into smaller pieces.

  6. Change temperature of oven to 425°F.

  7. Once oven is preheated, add veggie taters and cook for 8 minutes. 

  8. On a baking sheet, combine taters and roasted cauliflower. Top with shredded cheese. Put back into the oven under the broiler setting for about 3 minutes or until the cheese is melty and bubbling.

  9. Take nachos out of oven and dollop with sour cream, if using, plus green onions and bacon crumbles.

  10. Enjoy immediately!
