This sweet potato & pineapple sausage sheet pan dinner is easy to prepare, filling and delicious! It is a great weeknight meal with rice and served with a side salad.
My family has been enjoying this simple sheet pan dinner for a few years now; everyone loves it and it is easy to prepare. The sausage I use for this recipe is Evergood pineapple sausage but you can substitute with other sausage types. I purchase mine at Costco and have seen it at other grocery stores too.
How to make this Sheet Pan Dinner
Making this sweet potato and sausage sheet pan dinner is simple. Preheat your oven to 400F. Slice your sausage links into 1 inch rounds and dice the sweet potatoes into 1/2 inch cubes.
Add sausage and veggies onto a large baking sheet and drizzle with olive oil. Add chipotle seasoning, salt and pepper, and maple syrup if using. Toss until all ingredients are fully combined and coated in olive oil. Bake for 40-45 minutes, stirring once at 20 minutes. It is done when the sweet potatoes are cooked through and the sausage is caramelized slightly. Enjoy with brown rice and a side salad.

Sweet Potatoes are a great source of fiber, vitamins, and minerals and taste amazing.
Pineapple Sausage caramelizes beautifully and adds protein.
Chipotle powder adds heat and depth. I like to use the Penzey brand. You can add more if you want extra heat and flavor.
Maple Syrup (optional) adds sweetness
Salt & Pepper
Olive Oil
*Other variations including adding raw onions to the sheet pan or a little bit of miso paste mixed with water. Sheet pan dinners are highly adaptable.

Ingredients
- 13 oz Pineapple Sausage about 3 cups
- 2 medium sweet potatoes 2-3 cups
- 2 tablespoons olive oil
- 1-2 teaspoon maple syrup optional
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat oven to 400F

Slice sausage into 1" rounds and dice sweet potato into 1/2" inch cubes.

Drizzle with olive oil and add chipotle seasoning, salt and pepper, and maple if using. Toss until all ingredients are fully combined and coated nicely.

Bake for 40-45 minutes or until sweet potatoes are cooked through and sausage is caramelized nicely, stirring halfway through.

Enjoy. It is great served with rice and salad.
