Ingredients

Rosemary sprigs are the skewer and also are minced to create flavor in the cheese marinade.
Crushed red pepper add a little heat to the cheese marinade.
White balsamic vinegar adds acid tot he cheese marinade. The original recipe calls for white wine vinegar but either work fine.
Extra-virgin olive oil for the cheese marinade, use a good quality brand.
Kosher salt is always needed!
Fontina cheese has a mild, nutty flavor, perfect in this appetizer. Remove wax and cut into cubes.
Purple grapes make sure to buy firm, ripe grapes for this recipe.

Making this recipe is simple, although it does take a little bit of time. First, prepare the springs of rosemary by clearing the needles off the bottom half, making room for the grapes and cheese. Use some of the rosemary needles for the marinade by mincing enough for 1/2 cup and adding to crushed red pepper, white balsamic, olive oil and salt. Mix well and pour over fontina cheese cubes. Let the cheese marinade in a plastic bag or in a bowl for 4 hours, stirring at least once half way through. Assemble the skewers by adding a grape, then marinaded cheese, then a grape to each skewer. Assemble on a serving platter and enjoy! It is best at room temperature.

  • 24 fresh rosemary sprigs
  • 3/4 crushed red pepper
  • 2 Tablespoons white balsamic vinegar
  • 2 Tablespoons extra virgin olive oil
  • kosher salt
  • 1/2 pound fontina cheese wax removed, cut into 24 cubes
