Beet Farro Feta Salad Recipe

This date farro feta salad recipe is a flavorful and filling simple lunch or a beautiful side dish alongside dinner.

I originally saw this recipe on the good eggs website and it was so delicious that I decided to make it over and over again, with a few minor adaptations. The combo of golden beets, cooked farro, crumbled feta cheese, mint, olive oil, white balsamic and date syrup is just so delicious and filling.

This salad is pretty simple to make and stores well if you want to use it as meal prepped lunches for a couple of days.

A few notes about the ingredients. For the date syrup I like to use the Just Date Syrup brand, but if you can’t find that exact brand then there are other similar syrups on amazon. This recipe calls for golden cooked beets, but if you can’t find golden beets, regular beets are just fine. Sometimes you can find beets already cooked at grocery stores (I know Trader Joe’s has some) or you can cook them in your instant pot for 15 minutes (if beets are medium sized) with a cup of water at high pressure. After they cool the skins peel off easily. You sometimes can purchase cooked farro at certain grocery stores, but if that is hard to find you can buy the quick cook farro at Trader Joe’s, which just take 10 minutes.

Golden Beet Farro Feta Salad with Mint and Date Syrup

Ingredients

  • 2-3 medium golden beets, cooked
  • 1 tbsp white balsamic vinegar
  • 2 tbsp olive oil
  • 8-10 oz cooked farro
  • 4 oz feta cheese crumbles
  • 2 tbsp mint, leaves removed from stems and chopped
  • drizzle date syrup
  • pinch flake salt

Instructions

  1. Mix olive oil and white balsamic in a bowl and whisk together until dressing is combined. 

  2. Slice beets into bit sized chunks and place in the bowl with beets. Mix so that beets are covered in dressing.

  3. In two bowls divide the cooked farro, marinated beets, and feta crumbles. 

  4. Sprinkle with mint leaves and drizzle generously with date syrup. 

  5. Garnish with flake salt and enjoy!
