I’m excited to share with you this sun-dried tomato broccoli pasta recipe that is a big hit in our family. I’m always grateful for tried and true recipes that I know my kids will eat and that I can enjoy, too.
Lately my kids are changing their tastes so often I can hardly keep up… One week they beg to have clementines in their lunchboxes, and the next they act as if it is offensive that I would even think of putting one in their lunchbox.  I think they come by their rapidly changing food cravings naturally (I also don’t like to eat the same foods over and over… as you can see by the variety of recipe featured in Meal Plan Mondays) but still it is hard to keep up! Do you share the experience of revolving tastes personally or notice it in your children? What are your tips for keeping up?
One thing I do when I’m feeling overwhelmed by the food complaints or wasted food left uneaten in my kids lunch-boxes, is to put a meal on the table that I know everyone will enjoy with no fuss. This sun-dried tomato broccoli pasta recipe is one of those meals. With a rich parmesan sauce, broccoli and pasta I know my kids will eat it up without complaint… although if I’m being completely honest my kids often pick out the tomatoes. I’m hoping with repeat exposure one day they will see the light and love tomatoes the way I do.

Sun-Dried Tomato Pasta
Sun-Dried Tomato Broccoli Pasta Recipe
Delicious simple weeknight pasta recipe with sun-dried tomatoes, broccoli and parmesan.
Ingredients
- 1 lb fusilli pasta or pasta of choice
- 1/4 C extra virgin olive oil
- 1/4 C butter
- 2 t salt
- 6 C garlic minced
- 2 T fresh thyme leaves
- 12 oil packed sun dried tomatoes drained and sliced into thin strips*
- 1 bunch broccoli or broccolini cut into bite size pieces
- 1 1/4 C grated parmesan cheese
Instructions

Cook pasta until al dente in generously salted water.

When you drain pasta reserve 1/2 C pasta water.

While pasta is cooking, heat olive oil and butter in large pan.

Add salt and garlic until garlic begins to brown, about 1-2 minutes.

Add thyme and sun dried tomatoes.

Toss and add broccoli.

When broccoli is heated through, combine pasta and broccoli in pan or in bowl.

Add 1 C parmesan cheese and stir to mix. If needed add pasta water 1 T at a time to reach desired consistency.

Sprinkle with additional parmesan cheese and enjoy!
Recipe Notes
*In place of sun dried tomatoes I sometime roast my own tomatoes using 1 pint cherry tomatoes, thyme leaves from 1/2 bunch of thyme, salt, pepper and olive oil. Roast at 250F for 3 1/2 - 4 hours
