Dairy Free Vegetarian Recipes Meal Plan | Occasionally Eggs

This week’s I’m sharing a dairy free vegetarian recipes meal plan from the blog Occasionally Eggs by Alexandra Daum. The recipes are beautiful, healthy and perfect for Spring & Summer. The menu includes a summer salad + strawberry vinaigrette, a roasted carrot soup with walnut parsley pesto, Swiss chard quinoa patties, spring greens salad, and a Mexican quinoa bowl with quick pickled red onion.

I’m excited to introduce you to Alexandra:

Alexandra has been cooking since she was little, but shifted over to a whole-foods diet to help with depression and anxiety that had been issues since her childhood. Her recipes on Occasionally Eggs are dairy-free and 99% vegan – she has only posted one recipe using eggs in the past year! She is a yoga instructor and also makes pottery and jewelry. She studied organic food production in university and local/organic is really important to her. She recently opened an online store and has a plant-based comfort food e-book.

Ingredients: butter lettuce, red lettuce, French lentils, ripe avocado, raw pepitas, strawberries, small pea shoots, small sunflower shoots, olive oil, balsamic vinegar, dijon, pepper, salt.

Isn’t this just the most gorgeous salad you’ve ever seen! I love that it is a meal on it’s own with lentils that make it filling. Strawberries are so delicious right now and this salad is a perfect way to incorporate them into your diet!

 Roasted Carrot Soup with Parsley Walnut Pesto

Ingredients: carrots, onion, avocado oil (or other oil), salt, black pepper, vegetable stock, lemon, maple, hot pepper flakes, garlic powder, parsley, walnuts, garlic, salt.

I love that this spring soup is a vibrant orange from the roasted carrots and is garnished with a unique walnuts parsley pesto. Yum!

Swiss Chard Quinoa Patties with Avocado Dip

Ingredients: quinoa, Swiss chard, parsley, red onion, buckwheat flour, large eggs, garlic cloves, lemon juice, olive oil, dijon, maple, garlic powder, hot pepper flakes. Dip: avocado, tahini, olive oil, lemon juice, parsley, chives.

There is something about dipped foods that are just fun to eat! I love that these patties are filled with healthy ingredients like Swiss chard and quinoa and that the dip is primarily made from avocado.

Spring Greens Salad with Wild Garlic

Ingredients: quinoa, coconut oil, leek, zucchini, radish greens or fresh spinach, peas, wild garlic, radishes, avocado.

This a true green salad- zucchini, leeks, radish greens, peas, wild garlic, avocado! I have a bunch of radishes growing in my garden that are perfect for this beautiful salad. For cutting the radishes super thin I love to use my mandolin.

Mexican Quinoa Bowl with Quick Pickled Onions

Ingredients: kale, garlic, quinoa, black beans, corn, avocado, sweet potato, olive oil, maple syrup, salt, cayenne, red onion, lime, jalapeno.

This Mexican bowl has me drooling just looking at it! The recipe is perfect as is but you can also add or sub any ingredients that you like- tomatoes, squash, bell peppers, etc.
