Chocolate zucchini bread time! I forgot about my zucchini plant for a week or so and ended up with a couple MASSIVE zucchinis that I was not interested in eating really but did not want to waste… so the answer of course was zucchini bread.
This is the recipe I made, multiple times actually, and it tastes more like cake than bread. I shared with friends (even though I wanted to eat it all myself) and everyone who tried it loved it. Even my kids were fooled into thinking it was a wonderful “treat.” The recipe is very zucchini heavy, but the flavor is mostly hidden by the strong chocolate flavor and hints of vanilla and cinnamon. I hope you enjoy it as much as we did, I am keeping this recipe handy for zucchini season for years to come! Chocolate Zucchini Bread
Chocolate zucchini bread that tastes more like cake than bread. Simple and delicious treat that uses up zucchini!
Ingredients
- 4 C grated zucchini
- 2 1/2 C all-purpose flour*
- 1/2 C unsweetened cocoa
- 2 t baking soda
- 1/2 t salt
- 1 t cinnamon
- 1 1/2 C sugar
- 2 eggs**
- 3/4 C unsalted butter melted
- 1 t vanilla
Instructions

Preheat oven to 350 degrees.

Drain grated zucchini in thin strainer to get rid of excess moisture until needed.

In large bowl mix together flour, unsweetened cocoa, baking soda, salt and cinnamon.

In another bowl beat together sugar and eggs until smooth. Add melted butter, cinnamon and vanilla and mix to combine.

Add drained zucchini into the wet mixture and combine.

Add the four portion to the wet ingredients in 3 portions, stirring to combine.

Pour batter into two loaf pans.

Bake in oven for 50 minutes or until skewer comes out clean.

Remove from oven and cool on a rack for five minutes. Then remove from loaf pans and let cool completely.

Wait until cool to eat. Enjoy!
Recipe Notes
* This recipe turns out great with GF flour as well! We made a batch with the gluten free flour mix from Trader Joe’s and it was just as amazing as with regular flour.
** In place of eggs you can substitute 2 T chia seeds mixed with 6 T water and it is great! We did that too for one of the batches (because I was out of eggs).

I love, love, love chocolate zucchini bread! It is one of my favorite things to do with zucchini, I only wish I had grown a plant this year. Going to have to again next year because not only are the zucchini good but stuff and fry the blossoms and oh man are they delicious!
You’ll have to get some from your farmer’s market this year and definitely get back to growing zucchini next year! The blossoms really are delicious too!
