Today I have a deliciously refreshing butternut persimmon smoothie recipe to share with you. In the summer it practically becomes a habit to roll out of bed in the morning and head straight to my trusty blender to make a morning smoothie. When Fall rolls around I’m more likely to head straight for my tea kettle instead but every once in a while I still start the day off right with a smoothie. This week I decided to use seasonal ingredients to make a smoothie unlike any I’ve made before, using butternut squash and persimmons that I picked up from the farmer’s market as the base.  I was suspicious about those flavors in a smoothie but paired with kiwi, orange and apple it turned out fantastic.  I sprinkled a few pomegranate seeds on top, which Maverick and I loved but Adelaide and Rick were not fans of, so consider the garnish optional.

Ingredients

  • 1/2 apple
  • 1 orange, peeled
  • 1 kiwi, peeled
  • 1/2 cup butternut squash
  • 1 fuyu persimmon
  • handful of ice
  • 1 cup coconut water can use other liquid like orange juice or water
  • pomegranate seeds optional garnish

Instructions

  1. Add all ingredients to blender, and blend until desired consistency.

  2. Garnish with pomegranates, optional.

    • I hope you try it! The butternut squash flavor blends right in and I’ll definitely be using it more often in my smoothies.
