Bacon, Summer Squash, Caramelized Onion Pizza

Sometimes my favorite meals come on nights I don’t have anything planned and don’t feel like going to the grocery store. This bacon, summer squash, caramelized onion pizza is one of those recipes; I had some squash in my garden, an onion, bacon and some pizza supplies in my fridge.  I hoped it would turn out okay but I actually ended up loving it and I hope you do too.

Bacon, Summer Squash, Caramelized Onion Pizza

1 yellow squash, thinly sliced
1 Yellow onion, thinly sliced
bacon, 10-12 strips
garlic clove, minced
olive oil
salt & pepper
mozzarella cheese, shredded
pizza dough


1.  Preheat the oven to 425. Roast bacon in the oven by placing individual strips on a cooling rack, on top of a cooking sheet covered with aluminum foil.  Cook for 15-20 minutes or until bacon reaches desired crispiness. (method for cooking bacon this way can be found here).  Let bacon drain and cool on paper towels and then crumble and set aside.

2.  After you are finished cooking the bacon turn the oven temperature up to 500 degrees fahrenheit and place your pizza stone in the oven if you have one.

3. Caramelize the onions by heating a sauté pan with a little olive oil.  Add a pinch of salt and onion slices over medium heat, stir and then let cook for about 30-40 minutes, checking and stirring every 5 to 10 minutes until they reach the desired level of caramelization.  You can deglaze with a splash of water.  Set aside.

4.  Sauté yellow squash by in the a sauté pan with a little olive oil, salt and pepper over medium heat for 4-5 minutes until crisp-tender and set aside.

5.  Assemble pizza by rolling out pizza dough and placing the dough on a pizza paddle with cornmeal if you have a pizza stone, or directly on a cooking sheet. Brush rolled-out dough with a little olive oil and minced garlic, and sprinkling on shredded mozzarella cheese. Arrange yellow squash, caramelized onions and bacon on top.

6. Bake in the oven for 8-12 minutes.

7.  Enjoy!
