Confetti Kitchen came to life as founder Cynthia Samanian realized that having friends over for dinner was way harder than it needed to be. Even as someone who loves to cook, Cynthia found it challenging to pull off a casual dinner party without hours of researching recipes, sourcing ingredients, and often breaking the bank. Yet, she recognized that her friends, many of them inexperienced cooks, aspired to do the same. They’d text her for dinner party recipe suggestions and menu ideas. That’s when it clicked: cooking was becoming increasingly social for a generation that didn’t know their way around the kitchen. This realization inspired Cynthia to build the ultimate resource for the millennial cook. When she’s not recipe testing, shooting photos, or hosting a dinner, Cynthia can be found hiking along the California coast and braving the cold Pacific waters with her surfboard.
Ideas for Dinner from Confetti Kitchen

Ingredients: eggplant, olive oil, salt, ground pepper, fresh thyme, pine nuts, sundried tomatoes, mozzarella cheese, phyllo dough, Dijon.
I happen to love roasted eggplant but if you don’t I’m guessing you could substitute with roasted summer squash instead and the tart would still be amazing!
Total Time: 30 minutes
Ingredients: quinoa, vegetable or chicken broth, olive oil, yam, cauliflower, turmeric, chili powder, salt, black pepper, lacinato kale, lemon, avocado, cashews, eggs.
This quinoa bowl is so filling and delicious and I’m always a fan of topping your meal with an egg! Yum!
Total Time: 1 hour
Ingredients: small onion, garlic, fresh ginger, cauliflower, olive oil, curry powder, cinnamon, crushed red pepper, chickpeas, diced tomatoes, coconut milk, salt, kale, quinoa.
Curry is my go-to meal on cold, rainy days this winter and this version is healthy and delicious!
Total Time: 20 minutes
Ingredients: lemon, shallot, olive oil, salt and pepper, lacinato kale, Brussels sprouts, apple, Medjool dates, cooked chicken breast, pepitas.
Have you tried brussels sprouts in salad before? It is one of my favorite salad greens! The Medjool dates add the perfect amount of sweetness to salad dressings like this one.
Soba Noodle Salad
Total Time: 20 minutes
Ingredients: garlic cloves, fresh ginger, soy sauce, brown sugar, sesame oil, crushed red pepper, soba noodles, carrots, bok choy, purple cabbage, shelled edamame, canola oil, green onions.
Who needs take out when you can make this dish on your own! You should be able to find soba noodles at your local grocery store but if not you can order them online too.
