I’m really excited about this week’s meal plan featuring five delicious weeknight recipes meal plan with Culinary Hill. This pescatarian meal plan includes a strawberry pecan salad, orzo pasta salad with roasted veggies, vegetarian stuffed bell peppers, pan fried tilapia, and a Mediterranean quinoa bowl. I must be craving recipes with bell peppers because this week uses a lot of them!

Strawberry Spinach Salad from Culinary Hill
Prep Time: 15 minutes Cook Time: 5 minutes Total Time: 20 minutes
Ingredients: balsamic vinegar, olive oil, dijon, roasted pecans, spinach, strawberries.
This recipe is so so simple but delicious! You can dress it up a little by adding avocado, chicken or some cheese or serve it as is for a light lunch or side.
Orzo Pasta Salad with Roasted Vegetables from Culinary Hill
Ingredients: red, orange and yellow bell peppers, asparagus, grape tomatoes, olive oil, pine nuts, orzo pasta, garlic, vegetable broth, lemon zest, lemon juice, basil, feta, salt and freshly ground pepper.
This is a fresh and delicious pasta salad that you can make ahead of time and eat for lunches if you want. You could also sub orzo pasta with quinoa if you want.
Vegetarian Stuffed Bell Peppers
Prep Time: 15 minutes Cook Time: 45 minutes Total Time: 1 hour
Ingredients: bell peppers, salt, olive oil, onion, garlic, chipotle chiles, corn, black beans, Monterey Jack Cheese, rice, diced tomatoes, cilantro or parsley, tortilla chips.
I love stuffed bell peppers, don’t you? They are healthy and flavorful and also make great leftovers.
Pan Fried Tilapia from Culinary Hill
Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes
Ingredients: tilapia fillets, salt and freshly ground black pepper, olive oil, onion, garlic, bell peppers, diced tomatoes, capers, dried thyme, lemon juice.
I’m trying to incorporate more fish into my diet and this recipe is so simple and flavorful!
Mediterranean Quinoa Bowl from Culinary Hill
Ingredients: olive oil, chickpeas, garlic powder, dried basil, freshly ground black pepper, quinoa, water, packed arugula, grape tomatoes, cucumbers, yellow bell pepper, Kalamata olives, hummus.
I love a good quinoa bowl, especially if kalamata olives are involved. This recipe would also make great recipes and avocadoes would be a welcome addition!

Strawberry Spinach Salad is one of our family favorites and one we make often. One thing I have learned is to put all the dressing ingredients in the blender and puree’ instead of trying to finely chop the onion and wisk everything together. MUCH easier! In the winter time when strawberries are out of season (or just for a change), I use a can or two of mandarin oranges instead of strawberries. Crumbled feta cheese is also good on this salad if you like feta and crushed walnuts are a good (and cheaper) substitute for the almonds if you don’t have almonds on hand. Thanks for the recipe!
