I’m thrilled to share five simple vegetarian meals by Savory Tooth for this week’s meal plan Monday. Savory Tooth is a colorful food blog that is all about tasty savory dishes. The blog is run by Julia, whose cooking is inspired by her travel adventures, her upbringing, and whatever she finds at the market. She currently lives in Boston, MA and loves to go hiking on the weekends.
This week’s recipe inspiration includes a savory heirloom tomato tart, a Mediterranean salad, vegetable chow mein, guacamole burrito with roasted tomatoes and black beans, and blackened portobello mushroom pita pockets. Simple Vegetarian Meals by Savory Tooth
Vegetable Chow Mein from Savory Tooth
Ingredients:Â chow mein or spaghetti, shredded cabbage, sliced carros, zucchini, red bell pepper, soy sauce, oyster sauce, vegetable oil.
I crave chow mein every so often and recently discovered that making it at home tastes so much better than ordering take-out! You get to control what is in it and load it with veggies. I use olive oil in recipes like as my vegetable oil.
Mediterranean Salad from Savory Tooth
Ingredients:Â orzo pasta, baby spinach, tomatoes, basil, roasted sunflower seeds, kalamata olives, asiago cheese, garlic, balsamic, olive oil, salt, pepper.
This would make a great salad for dinner or also to pack up for lunches throughout the week! Great flavors and filling too.
Savory Galette with Pesto and Heirloom Tomatoes
Ingredients:Â pie dough (flour, parmesan, unsalted butter, cold water, salt), pesto, heirloom tomatoes, parmesan, pepper, parsley, egg.
I obviously love galettes a lot (see: savory galettes + sweet galettes), and this one has all of the best flavors- pesto, tomatoes, and garlic. You can buy a pre-made pie crust and it will be fine, but maybe not quite as delicious as the recipe you can make from scratch that has parmesan incorporated. Whatever works though!
Guacamole Burrito with Balsamic Roasted Tomatoes and Black Beans from Savory Tooth
Ingredients:Â tortillas, avocados, black beans, grape tomatoes, garlic cloves, balsamic vinegar, olive oil, salt, pepper.
Guacamole is always my favorite part of any burrito so I love that in this recipe it shines as the main ingredient. You really can’t go wrong adding in roasted tomatoes and black beans too!
Blackened Portobello Mushroom Pita Pockets
Ingredients:Â portobello mushroom caps, olive oil, blackening seasoning, pita, baby spinach, shredded cheese, garlic cloves, Sriracha.
Mushrooms are such a great filling vegetarian option for sandwiches, wraps and pitas. Feel free to dress this up with whatever toppings sound good!
