Feta Stuffed Bell Peppers

I have been trying to get more into appetizers lately, but planning and creating appetizers does not come naturally to me; I mostly think of the main course when preparing meals.  When I do decide to make an appetizer I want something simple and quick and these feta stuffed bell peppers are about as easy as it gets.  You basically just cut up some bell peppers, fill them with feta and stick them under the broiler until bubbly.  I’ve been surprised how even the picky eaters in my life seem to enjoy these; they are a great appetizer, side or snack.  I’ve been majorly craving bell peppers lately and plan to get out a recipe round-up of bell peppers recipes soon, maybe Friday? In the meantime, snack on these.

Feta Stuffed Bell Peppers

1 package mini bell peppers, or a few regular bell peppers
1 package feta cheese* 
fresh cracked pepper
 

1. Preheat oven to broil.

2. Cut and de-seed bell peppers into strips. Try to cut along the lines when possible to create boat-like bowls.

3. Spoon cheese into the bell pepper strips and place on baking tray.

4.  Crack fresh pepper over the stuffed bell peppers.

5.  Place tray in the oven for 2-5 minutes, until feta starts to brown. **

6.  Let cool slightly and enjoy!

*you can use crumbled feta or a block, I prefer using a block as it seems to create less of a mess.  I have also substituted goat cheese for feta in the past and thought it was delicious.

**Keep a close eye on these while on the oven… depending on how long you let it preheat and how strong your oven is they can burn pretty quickly.

Feta Stuffed Bell Peppers

  3. SAME!!! I mean – I spend so much time thinking about the main, I always forget starter – and dessert too!! This is a fab idea, I actually haven’t made this before, I’ll try it!

    • It is so easy to forget about appetizers and desserts, but I’m convinced meal times are less stressful when I plan ahead for the extras.

  6. Yum! I’ve never stuffed sweet bell peppers with just feta before, always quinoa or rice + sauteed veggies. This would make such an easy appetizer.

    Not a fan of bell pepper but this is an exceptional. I love when you add the feta cheese. This helps convince me that we can make our least favorite vegetable into something better. Definitely going to make one.
