Tomato Soup Grilled Cheese Croutons

Prep Time: 10 mins  Cook Time:  45 minutes  Total Time:  55 minutes

Ingredients:  Olive Oil, Yellow Onion, Garlic, Chicken or Vegetable Stock,  San Marzano Crushed Tomatoes, Saffron Threads, Orzo, Heavy Cream, Bread, Sharp Cheddar Cheese.

I’ve never made anything with Saffron in it before and to be honest I’m not sure if I could taste the difference I was supposed to… what exactly is saffron supposed to add to the dish? I liked the soup though and thought that grilled cheese croutons were a fun idea, although my husband preferred to keep his croutons on the side and dip each one individually so that they didn’t get soggy.

Pumpkin Mac and Cheese

Ingredients: Penne Pasta, Unsalted Butter, Flour, Milk, Salt, Pepper, Nutmeg, Pecorino Cheese, Pumpkin Puree, Egg Yolks.

I’m kind of obsessed with different types of macaroni and cheese lately… every single kind I’ve tested recently has been wonderful and this one was no exception. This dish is definitely kid friendly and for the pumpkin puree you could use canned or fresh.  I used canned this time but next time I will try fresh instead.

Cauliflower Soup

Ingredients:  Butter, Onion, Carrot, Celery, Cauliflower, Parsley, Chicken or Vegetable Broth, Flour, Whole Milk, Half & Half, Salt, Sour Cream.

This is the best cauliflower soup ever! It is loaded with creamy goodness and is incredibly tasty.  Although I usually add the sour cream I don’t think it is entirely necessary, it still tastes great without that final step.  Sometimes when I make this soup I double the amount of carrots and celery just to make the soup a little more colorful.

Prep Time: 20 mins  Cook Time:  10 minutes  Total Time:  30 minutes

Ingredients: Kosher Salt, Heavy Cream, Truffle Butter, Black Pepper, Tagliarelle or Fettuccine Dried Pasta, Fresh Chives, Parmesan.

Oh man, Rick and I love this dish! It is definitely rich so you will only want to make it every so often, but it is delicious! The chives and truffle butter are the stars of this dish and I add way more chives than the recipe calls for because that makes it more healthy right?  I found truffle butter at Whole Foods, but I’m sure they sell it at other stores as well.

Fried Goat Cheese Pomegranate Salad

Prep Time: 10 mins  Cook Time:  5 minutes  Total Time:  15 minutes

Ingredients: Soft Goat’s Cheese, Flour, Eggs, Breadcrumbs, Oil, Pomegranate Rubies, Pine Nuts, Salad Greens, Olive Oil, Balsamic Vinegar.

This salad was seriously so so good.  Rick normally is not really into goat’s cheese but even he could not stop raving about this salad.  I don’t normally fry foods, but this was a welome exception to that rule.  All the components of this salad fit so nicely together and I don’t see how you won’t love it, so please do yourself a favor and make this salad!  I used spinach for my salad greens but I think any type of edible leaf would do.  And I love how pomegranate seeds are referred to as rubies in this recipe.

  2. Just made the Cauiflower soup! YUMMY!!! LOVED IT…. I used different milk and a cup and a half of sour cream!The whole family ate it up!! 🙂
