Meal Plan: Winter 2014 Week 12

Normally when I provide a weekly meal plan and shopping list it is with recipes that I have tested myself and enjoyed with my family.  This week has not been conducive to trying new recipes out; I’m babysitting two extra (adorable but highly energetic) kids and am very tired from pregnancy and/or the car accident I was in two weeks ago. Instead of my normal cuisine (high in vegetables, meat sparingly when at all) this week we ate a lot of meaty recipes (spaghetti bolognese, shredded pork burritos, beef tacos) that I didn’t even need recipes for as they are memorized from my childhood. Instead of posting what I actually ate this week, the meal plan below is a list of meals I have been wanting to try this Winter but haven’t yet (with the exception of the pasta- I’ve made that recently and it was great).  I feel like I’m pretty good at this point at being able to tell if a recipe is going to taste good before I make it so I hope these dishes are delicious for you.  Please let me know how you like them and have a great week! Winter 2014 Week 12

Prep Time: 15 minutes Cook Time: 45 minutes Total Time:  1 hour

Ingredients:  cocktail tomatoes, olive oil, garlic, balsamic or champagne vinegar, crushed red pepper, fresh oregano or dried parsley, salt & pepper, pasta, grated parmesan or pecorino romano.

I made this pasta because I had a ton of little tomatoes I didn’t know what to do with and I really loved the simplicity and flavor of this pasta. I used dried italian herbs instead of fresh oregano and used white balsamic vinegar.

Prep Time: 20 minutes Cook Time: 40 minutes Total Time:  1 hour

Ingredients:  black beans, yellow or white onion, olive oil, ground cumin, chili powder, water, sherry vinegar, sea salt & black pepper, avocados, cilantro, pepitas, jalapeno, garlic, lime, corn tortillas, feta.

I’m such a fan of sweet potato, black beans and avocado combinations (Cookie and Kate is also the creator of one of my favorite burrito recipes!) When I looked at the picture I originally thought the topping was cotija cheese and I’m wondering if that would be good instead of feta… When I make these tacos I think I will have to do a taste test comparison between the two.

Prep Time: 10 minutes Cook Time: 30 minutes Total Time:  40 minutes

Ingredients:  olive oil, onion, garlic, red pepper flakes, dried oregano, dried basil, salt & pepper, diced tomatoes, chicken stock, cheese tortellini, baby spinach, grated parmesan.

I love tortellini soup and this one looks simple and delicious.

Prep Time: 10 minutes Total Time:  10 minutes

Ingredients: granny smith apple, lemon or lime, baby greens, candied pecans, gorgonzola or blue cheese, honey, mustard, shallot, balsamic vinegar, olive oil, salt and pepper.

This salad looks so good to me and to make it heartier you could definitely add a little grilled chicken.

Prep Time: 10 minutes Cook Time: 1 hour Total Time:  1 hour 10 minutes

Ingredients: red beets, golden beets, navel oranges, ruby grapefruit (optional), greens, avocado, coconut cream, lime juice, agave nectar or other sweetener, orange juice, grapefruit juice (optional), pinch of salt.

I love beet salads and think that this avocado dressing looks amazing.  I would probably leave out the grapefruit and use honey instead of agave nectar.
