Tomato Basil Peach SkewersTomato Basil Peach Skewers from Love and Lemons

Prep Time: 15 minutes  Total Time:  15 minutes

Ingredients: Cherry Tomatoes, Mozzarella Balls, Chopped Peaches, Basil Leaves, Olive Oil, Roasted Jalapeño, Garlic, Lime Juice, Agave/Honey/Orange Juice, Salt and Pepper.

These were delicious and super easy and I’m really loving the tomato and peach combo lately.  For the jalapeño-lime oil I used honey instead of agave or orange juice and I used small heirloom tomatoes and they were so good.

Prep Time: 15 minutes  Cooking Time:  1 hour 30 minutes Total Time:  1 hour 45 minutes

Ingredients: Sweet Potatoes, Olive Oil, Corn, Salt, Cumin, Chili Powder, Paprika, Olive Oil, Small Red Onion, Chipotle Peppers in Adobo, Greek Yogurt, Salt, Fresh Tomatoes, Black Beans, Cilantro, Cheddar Cheese, Chives.

I made these for my family and for my husband’s family as well and everyone loved them. I ended up needing more than the hour to get my sweet potatoes fully cooked- next time I think I would slice them in half before baking them in hopes of baking them quicker.  I will definitely be making these again and my sister in law Meg even mentioned that she plans to add this into her dinner rotation, and she is quite the cook so that is a compliment to this recipe for sure.

Sweet Corn Polenta with Peach and Tomato SalsaPolenta with Peach and Tomato Salsa from Vanilla and Spice

Prep Time: 10 minutes  Cooking Time:  20 minutes Total Time:  30 minutes

Ingredients: Sweet Corn, Olive Oil, Salt and Pepper, Cherry Tomatoes, Peach, Fresh Basil, Balsamic Vinegar.

This dish is more filling and flavorful than it appears; we all loved it.  The ingredient list has amounts for one serving so I quadrupled it on the grocery list.  I haven’t had polenta in years and am not really sure if this tasted like authentic polenta, my sister and I lovingly call it “polenta porridge,” but whatever it resembled it really was delicious.

Prep Time: 15 minutes  Cooking Time:  1 hour 30 minutes Total Time:  1 hour 45 minutes

Ingredients: Basil, Garlic, Salt, Canned Tomatoes, Olive Oil, Red Pepper Flakes, Swiss Chard, Lemon Zest and Juice, White Wine, Salt, Ricotta, Parmesan, Fresh Mozzarella, Grated Mozzarella, Eggs, Pepper, Lasagna Noodles.

Every time I make a recipe from Big Girl’s Small Kitchen I LOVE it and this recipe was no exception.  It was a pretty straightforward recipe and one of the easiest lasagna recipes I think I’ve made.  I made it for my husband’s family as well as my own and everyone thought it was great.  I’m planning on joining my local CSA again later this month and know I know exactly what I will use any swiss chard for.

Blueberry Blue Cheese SaladBlueberry and Blue Cheese Salad from Alaska From Scratch

Prep Time: 15 minutes  Total Time:  15 minutes

Ingredients:Blueberries, Garlic, Onion, Red Wine Vinegar or Apple Cider Vinegar, Olive Oil, Sugar, Salt and Pepper, Spinach Leaves, Pecans, Blue Cheese.

This is a simple salad but it is pretty tasty.  It can serve as a great side or an entree if you threw on some grilled chicken.  I felt accomplished making my own brightly colored vinaigrette and loved the way the salad looked as well as the way it tasted.  I used gorgonzola cheese instead of blue cheese and walnuts instead of pecans since I recently bought some from my farmer’s market that I want to use up.
