Apple Cheddar Grilled Cheese Sandwiches from Foodess

Prep Time:  10 minutes Cook Time:  5 minutes Total Time: 15 minutes

Ingredients: Rustic Bread, Mayonaise, Aged Cheddar Cheese, Apple, Red Onion, Arugula, Butter.

This sandwich made me miss my sister Jessica! She is currently in Portugal and doesn’t come back  until July. Eating delicious food and giggling together are our favorite pastimes.  We have always loved the apple and cheese combo; when we were little we ate macaroni and apple sauce and as we (slightly) matured we became obsessed with cheese plates & sliced apples. We never thought to put apples and cheese in a sandwich…  My family enjoyed these sandwiches although we did not add red onion.  I know I put a red onion in my shopping cart but I’m guessing one of my kiddos tossed it by the wayside before checkout (it wouldn’t be the first time). I liked the addition of arugula, although Rick preferred to leave it out.  We used our panini press instead of a pan.  I will definitely be making these again.  Oh, and I quadrupled the ingredients so you can make four sandwiches instead of just one.

Sweet Potato Chili from Chocolate Covered Katie

Prep Time:  15 minutes Cook Time:  30 minutes Total Time: 45 minutes

Ingredients: Onion, Sweet Potato, Diced  Zucchini, Black Beans, Diced Tomatoes, Chili Powder, Cumin, Salt, Orange Zest, Water {or Broth}, {Avocado}

Side Dish Suggestion: Cornbread from Mel’s Kitchen Cafe

This will be my new go-to chili recipe.  I love the addition of orange zest and the fact that this recipe if dairy free.  I topped my chili with avocado and it was amazing.  I used two cans of Black Beans and two small sweet potatoes (not sure if that equals 20 oz or not but I couldn’t figure out the conversion). This chili is great the next day for leftovers.  I made the Cornbread suggested above and it was super good & moist, although definitely not super healthy- it’s like a cake! If I made it again I would definitely omit some of the sugar.

Leek & Potato Tart from Citron Limette

Prep Time:  15 minutes Cook Time:  55 minutes Total Time: 1 hour 10 minutes

Ingredients: Pie Crust {Flour, Butter, Salt, Milk}, Olive Oil, Leek, Black Pepper, Potato, Milk, Eggs, Gruyere {or Swiss} Cheese, Parmesan Cheese, Dijon.

Side Dish Suggestion: Vertical Pear Salad from The Novice Chef  {Or any salad, these are just so cute!}

If you have a pie crust recipe or store brand that you love then stick with it, but if you don’t then this is my go-to quiche crust recipe (I never pre-bake this crust). Be sure to slice the potato thinly so it cooks all the way through.  We loved this quiche!

Ripe’s Cucumber Halloumi Salad with Licorice Notes from Serious Eats

Prep Time:  25 minutes Cook Time:  5 minutes Total Time: 30 minutes

Ingredients: Fennel Seeds, Halloumi, Extra Virgin Olive Oil, Sherry Vinegar, Garlic, English Cucumber, Tarragon Leaves.

Side Dish Suggestion: Sweet Potato Falafels from My New Roots

I was able to sample this salad at a cookbook signing party I attended with my mom in the summer honoring the amazing Cheryl Sternman Rule and her cookbook Ripe.  This salad was an immediate favorite and I knew I wanted to try to make it on my own. On my Pomegranate Molasses search for a recipe on last week’s meal plan I ended up at a local Mediterranean market.  I noticed Halloumi cheese there and grabbed it so I could finally make this salad for myself. Rick loved the salad but Adelaide only liked the cucumbers (the cheese was a tad too salty I think for her).

Millet, Grape & Pumpkin Salad from Green Kitchen Stories

Prep Time:  20 minutes Cook Time:  40 minutes Total Time: 1 hour

Ingredients: Millet, Butternut Squash, Hazelnuts, Avocados, Romanesco Broccoli {or Cauliflower/Broccoli}, Purple Grapes, Greens, Pomegranate Seeds, Basil, Parsley, Garlic, Lemon Juice, Extra Virgin Olive Oil, Salt & Pepper.

Preparation Tip: Roast the Butternut Squash ahead of time.

Side Dish Suggestion: Rustic Bread from The Stone Soup {Or store-bought bread!}

This dish has a lot going on but Rick and I really liked it.  I had never had millet before which is crazy because millet is amazing! Scoot over quinoa, I’ve found a new favorite. I had some cauliflower I wanted to get rid of so I used that instead of the Romanesco Broccoli (which I’ve only ever seen at farmer’s markets).  If I were to make it again I would leave out the cauliflower altogether, it was the only flavor that didn’t seem to mesh, but maybe that is because I used a substitution.

    • I know, right!? I can’t believe we never though of these during the Boulder days, they would have tasted so amazing when we were cooped up inside on snowy days 🙂 Thanks for being my number one fan Ruthie, you keep me motivated.

  2. I liked the chili a lot. It makes so much for such a small price. I think it is less than 10 bucks thats including the corn bread mix I bought! Dakota is sick so she didn’t want to try it. And Brad asked where the meat was ha. So late on trying it but better late than never!!

    • Glad you liked it… I guess you will just have to make it again when Dakota feels better! Brad is such a good sport 🙂
