Tomato Sandwich with Herbed Goat Cheese from Anthology

Prep Time: 8 minutes Cook Time:  2 minutes Total Time: 10 minutes

Ingredients: Whole Grain Bread, Garlic, Heirloom Tomatoes, Goat Cheese, Extra Virgin Olive Oil, Lemon, Chives, Basil.

Heirloom tomatoes are becoming a thing of the past now that Fall is here, but I’m still getting tons in my CSA.  Enjoy this super quick and delicious sandwich before they are seriously out of season.  Be sure to buy a soft enough loaf for your family members or else someone, like your husband, might complain for days that “the roof of my mouth still hurts.”

Butternut Squash Stuffed Shells from How Sweet It is

Prep Time: 15 minutes Cook Time:  1 hour 15 minutes Total Time: 1 hour 30 minutes

Ingredients: Jumbo Pasta Shells, Butternut Squash, Olive Oil, Nutmeg, Butter, Shallot, Garlic, Mascarpone, Parmesan, Flour, Milk, Mozzarella, Sage.

Preparation Tip: Roasting the Butternut Squash takes 40 minutes. You could cut and roast the squash ahead of time to make the execution of this dish quicker on the night you want to eat it.

These jumbo pasta shells can be tricky to find.  I think I have spotted them at Sprouts and Safeway and whenever I find them I stock up.   My whole family loved this dish and we will definitely be making it again.  I was surprised at how much I loved the sage garnish; next time I will add more leaves.

Chanterelle Quiche in Whole Wheat & Thyme Crust from Cook Sister!

Prep Time: 13 minutes Cook Time: 32 minutes Total Time: 45 minutes

Ingredients: Whole Wheat Flour, Flour, Butter, Dried Thyme, Eggs, Milk. Garlic, Chanterelles, Aged Cheddar.

I am normally intimidated by mushrooms but this week I faced my fears and made this sweet little quiche.  This recipe does not use typical American measurements so here are some conversions you might find helpful:

{200g = 7 oz.}

{50g= ~2 oz}

{A knob of butter= an amount a little larger than a walnut}

{175 C = ~ 350 F}

 My husband is not very fond of mushrooms but even he thought this quiche was flavorful and enjoyed seconds.

Baked Falafel with Cucumber & Tomato from Chow Vegan

Prep Time: 15 minutes Cook Time: 30 minutes Total Time: 45 minutes

Ingredients: Garbanzo Beans, Onion, Garlic, Parsley, Cilantro, Lemon Juice, Olive Oil, Coriander, Cumin, Red Pepper Flakes, Flour, Baking Powder, Pitas, Tomatoes, Cucumbers, Hummus

This is a family favorite! We had our darling neighbors over for dinner to enjoy this dish with us and they loved it.  Or they were just being polite.  No, I think they really did like them.  We stuffed our pitas with falafels, cucumbers, tomatoes and hummus, but you could use tzatziki or tahini instead.

Purple Cauliflower Soup from Chez Us

Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes

Ingredients: Purple Cauliflower, Shallots, Garlic, Vegetable Stock, Olive Oil & Paprika

This soup will taste good no matter what color cauliflower you use,  but how awesome is this bright purple color? I added whole milk at the end just because I had some on hand and mine was a little too thick.   We ate it with buttered whole wheat toast on a rainy night and it was heaven. I added one extra shallot just because that’s just the way I roll.
