Slow Cooker Tortilla Soup from The Naptime Chef

Prep Time: 20 minutes Cook Time:  5 hours  Total Time: 5 hours 20 minutes

Ingredients:  Yellow Onion, Garlic, Corn Tortillas, Chipotle Peppers in Adobo, Whole Tomatoes with Juices, Chicken or Vegetable Stock, Salt, Pepper, Avocado, Shredded Cheese, Tortilla Chips, {Sour Cream}.

Side Dish Suggestion: Salad with Pomegranate-Lime Dressing

I received a crock pot (almost five years ago!) as a wedding gift but I hardly ever use it.  After I tasted how good this soup turned out I think that is going to change! It was so nice to get everything ready for dinner early in the day when my kids are their most pleasant.   This recipe was really tasty although because of my inability to follow a recipe exactly I made a couple additions: I mixed in pinches of chili powder, oregano, brown sugar and cumin, and I also added a can of black beans to make it more hearty (or you could add some shredded cooked chicken).  We topped ours with avocado, sour cream and chips.  I will definitely be making this again.

 Roasted Butternut Squash, Sauteed Spinach & Caramelized Onion Lasagna from the Kitchy Ktichen

Prep Time: 30 minutes Cook Time:  1 hour 30 minutes  Total Time: 2 hours

Ingredients:  Butternut Squash, Spinach, Onion, Lasagna Noodles, Ricotta, {Buffalo} Mozzarella, Parmesan, Chili Flake, Garlic, Basil, Olive Oil, Butter, Milk, Parsley, Nutmeg, Peppercorns, Bay Leaf, Flour.

Side Dish Suggestion: Parmesan Herb Garlic Bread

Best Lasagna Ever! It makes a pretty big batch so I’ve been eating leftovers every day for lunch and I just can’t get enough.  This recipe is not simple or quick… there are lots of components and it takes a chunk of time but trust me it is worth it in the end! I did a couple of shortcuts; I used no boil whole wheat lasagna noodles, I precut the butternut squash, and I didn’t add parsley sprigs or peppercorns to my bechamel sauce.  The lasagna turns out very rich, flavorful and filling. Please make this, I don’t see how someone couldn’t like it.

Creamy Squash Rigatoni from Big Girls Small Kitchen

Prep Time: 10 minutes Cook Time: 35 minutes  Total Time: 45 minutes

Ingredients:  Delicata Squash, Butter, Garlic, Cayenne, Nutmeg, Salt, Milk, Cream, Rigatoni, Parmesan, Pepper.

Side Dish Suggestion: Roasted Brussels Sprouts

This pasta was rich and so good.   I was planning on buying a delicata squash at the farmers market on Saturday but ended up going to a Christmas parade instead.  I tried Whole Foods and they were out of them.  Since I never got my hands on one I used some kind of yellow kabocha squash instead and it turned out great. Be sure to save your pasta water like the directions say because you will need it for thinning.  I used whole wheat rigatoni noodles and they were yummy.  I also doubled the ingredients in the shopping list.

Kale Macaroni & Cheese from Fuss Free Cooking

Prep Time: 10 minutes Cook Time: 25 minutes  Total Time:  35 minutes

Ingredients:  Macaroni Noodles, Butter, Flour, Salt, Black Pepper, Milk, Cheddar, Kale, Garlic, {Breadcrumbs}.

Side Dish Suggestion: Sliced Asian Pears or Apples

I guess I was in a pasta mood this week… Normally I try to have more variation in a meal plan but apparently this rainy weather is making me want to carbo-load.  At least I substituted all the pastas with whole wheat kinds?  This macaroni was delicious and a definite kid pleaser.  It makes me happy to watch my kids eat kale for some reason, maybe because most adults I know won’t eat it so I feel it is an accomplishment when I can get my kids to ingest it.  I didn’t add the breadcrumbs and I added extra stalks of kale.

Brussels Sprout Salad with Red Onion & Pecorino from Not Without Salt

Prep Time: 10 minutes   Total Time:  10 minutes

Ingredients:  Red Onion, Lemon, Honey, Whole Grain Mustard, Black Pepper, Olive Oil, Brussels Sprouts, Pecorino Romano.

This is probably not hearty enough for a dinner unless you are a rabbit. I made it to eat with some leftover pasta and it was unique and flavorful.  Rick loved it, I liked it, and Adelaide ate a large portion although I’m not sure if she liked it or just really wanted to go out for frozen yogurt (which we only do if she finishes her whole meal).  I added a little extra honey and a little less mustard than was called for. I doubled the ingredients in the shopping list.

  2. Just made the tortilla soup! We enhoyed it very much. I added fresh cilantro and it made it taste great! We tried it with the beans like you made it…. Brad says next time he wants to try it with chicken. But hey it means he liked it if he wants to try it again and Dakota even ate her bowl which never happens with soup ha 🙂 I know you posted it a couple of weeks a go but this traveling stuff has put me behind on trying recipes 😉
