Meal Plan: Fall 2015 Week 12

Every Monday I post a colorful, veggie-filled weekly meal plan with a free printable color-coded grocery shopping as part of my Meal Plan Monday Series. Each recipe is inspired by a color of the rainbow, encouraging you to eat the unique nutrients available from a colorful menu. I’ve been doing this since 2012 and I enjoy sharing tried and true recipes with you!

I don’t know about where you live but the weather is getting pretty cold here in the bay area (for California standards… I admit I’m a wimp)! Eating delicious and cozy foods definitely helps to fight the chill and I have two soups, one lasagna, a pizza and salad that I think you are going to love in this week’s line up. Smoky Tomato Lentil Soup

Smoky Tomato Lentil Soup from Post Punk Kitchen

Prep Time: 15 minutes Cook Time: 45 minutes Total Time: 1 hour

Ingredients: olive oil, yellow onion, garlic, dried thyme, sweet smoked paprika, dried brown (or green) lentils, vegetable broth, salt, black pepper, fire-roasted tomatoes, fresh baby spinach, kalamata olives.

Count me in for any recipe with kalamata olives. I’ve made this recipe a handful of times now (Thanks Meg, for introducing it to me!) and will definitely be making it again in the future. It is hearty, simple and oh-so-good.

Sweet Potato, Brown Butter, Ricotta and Sage Pizza from Rainbow Delicious: Adapted from Feast Cookbook

Prep Time: 8 minutes Cook Time: 12 minutes Total Time: 20 minutes

Ingredients: ricotta, sweet potato, cornmeal, flour, pizza dough, parmigiano reggiano, olive oil, butter, sage, salt and pepper.

This recipe is adapted from the seasonally organized Feast Cookbook (which is AMAZING… great gift for foodie friends and loved ones) and it is a unique but flavorful pizza. I really liked it and will definitely be making it again soon.

Butternut Squash Lasagna

Butternut Squash Lasagna from Alexandra’s Kitchen

Prep Time: 20 minutes Cook Time: 1 hour 25 minutes Total Time: 1 hour 45 minutes

Ingredients: butternut squash, vegetable oil, milk, rosemary/sage, garlic, unsalted butter, flour, no-boil lasagna pasta, freshly grated Parmesan, heavy cream, salt.

This lasagna is incredibly rich and amazing.. I used just sage instead of rosemary in the sauce and loved the hint of sage in every bite.  This recipe is unique because it is topped with salted whipped cream! It is a labor of love to make this pasta but I promise it is worth it!

Chicken Avocado Soup

Chicken Avocado Soup from Mama Miss

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes

Ingredients: chicken breast, olive oil, salt and pepper, green onion, garlic, tomato, broth, cumin, avocados, cilantro.

I love this soup because it is so simple to put together and feels healthy while still tasting good. I added a little extra garlic and cumin and used vegetable broth instead of chicken broth. Is great served with chips or quesadillas.

Persimmon, Pear, Pomegranate and Avocado Salad

Prep Time: 10 minutes Total Time: 10 minutes

Ingredients: pomegranate, avocado, pear, fuyu persimmon, walnuts, baby greens, feta, white balsamic, olive oil, salt and pepper, dijon, tangerines.

This salad has a lot of flavors going on but they work together to make a beautiful Fall salad that leaves you wanting more. Fresh squeezed tangerine juice gives the dressing a sweet little zing and if you haven’t tried persimmons yet this is a must-try!
