I’m so excited to share this healthy vegetarian weekly menu from Foolproof Living. Aysegul Sanford is the foodie and author behind Foolproof Living and here is an introduction to this lovely woman in her own words:
“I started Foolproof Living back in 2013 after my mother’s sudden passing. I wanted a place where I can gather her recipes. I really didn’t think that I would stick to it, but I did. Since then, I worked really hard to better my photography and started to work as a food photographer. Photography and reading are my true hobbies. I am a cookbook and podcast junkie. Lately, I have been very into naturally sweetened baking and I am working on getting my website to be a place where all baked good are made with natural sweeteners. Therefore, I am collecting cookbooks that share recipes similar with my goal. I think what makes me unique is the fact that I grew up in Turkey and moved to the US fifteen years ago. Since then I lived in Princeton, San Diego, Atlanta, and even on a small island called Virgin Gorda in the British Virgin Islands.”

Healthy Vegetarian Weekly Menu with Foolproof Living
Baby Spinach Salad with Blood Oranges from Foolproof Living
Prep Time: 10 minutes Total Time: 10 minutes
Ingredients: baby spinach, blood oranges, pomegranate seeds, avocado, pecans, red onion, lime juice, feta, olive oil, sea salt, black pepper.
Isn’t this salad just so gorgeous? Perfect for any holiday dinner coming up, for a light meal, or a pretty side. These are some of my favorite flavors and the citrus this time of year is so delicious.
Sweet Potato and Coriander Soup with Spicy Chickpea Croutons from Foolproof Living
Prep Time: 30 minutes Total Time: 30 minutes
Ingredients: chickpeas, olive oil, chili powder, garlic powder, cumin, cayenne, black pepper, cinnamon, salt, hot sauce, olive oil, onion, shallot, garlic, coriander, sweet potatoes, vegetable stock. cilantro or parsley.
Have you tried roasted chickpeas yet? They are so so good! Perfect for salads or snacking or for a garnish on soups as used in this recipe. This is a perfect winter recipe for any night of the week!
Roasted Acorn Squash Salad with Peptias and Cranberries from Foolproof Living
Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 55 minutes
Ingredients: acorn squash, olive oil, pepitas, lime, cayenne, apple cider vinegar, olive oil, salt, arugula, leafy greens, farro, dried cranberries, pomegranate seeds, goat cheese.
Don’t let the fact that this recipe is for a salad fool you into thinking it can’t be a filling dish… the farro, squash, cranberries and pepitas work together to make a healthy and satisfying meal all on its own!
30 minute Broccoli and Feta Soup from Foolproof Kitchen
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Ingredients: olive oil, onion, celery, garlic, black pepper, yukon gold potato, vegetable stock, broccoli florets, Italian parsley, feta, sumac (optional).
Broccoli is the one vegetable that my five year old son actually enjoys so I’m always on the lookout for broccoli recipes! I love that this recipe is so simple with a short ingredients list and only takes 30 minutes to prepare.
Slow Cooker Butternut Squash Lentil Stew from Foolproof Living
Prep Time: 30 minutes Cook Time: 6 hours Total Time: 6 hours 30 minutes
Ingredients: butternut squash, carrots, sweet potato, celery, French du Puy lentils, onion, garlic, vegetable stock, cumin, coriander, kale, white wine vinegar or apple cider vinegar.
You know I’m a big fan of crock pot recipes (see past crockpot meal plan and vegetarian crockpot meal plan) and I love that this crockpot recipe is so healthy and filling. If you are hosting over the holidays this would be a perfect meal one of the days that you throw in the crockpot in the morning. It would be great with a side of buttered bread.
