My kitchen cupboards have been driving me crazy lately! Have you ever felt like the way you originally organized things just isn’t working at all and you have to start over? Well, that’s how I felt this week and took a full day emptying out all my cupboards, organizing, and restocking. It literally took me all day because of course I also still had to feed my kids, guide them in play activities and nurse Cash, but in the end it was worth it. I discovered a lot of foods hiding that I forgot I even had and attempted to use them (quinoa, farro, lentils and couscous) in my meals this week. All of these recipes have a filling yet healthy quality and are great for before, during or even after your Thanksgiving celebrations this week. Easy Fall Dinner Recipes Meal Plan
Butternut Squash Lentil Chickpea Moroccan Stew from Ambitious Kitchen
Prep Time: 10 minutes Cook Time: 25 minutes Total Time: 35 minutes
Ingredients: olive (or coconut) oil, white onion, garlic cloves, cumin, cinnamon, sea salt and pepper, diced tomatoes, chickpeas, vegetable broth, butternut squash, green lentils, saffron, lemon juice, red pepper flakes, cilantro, basil.
My sister made this for dinner this week and it had such great depth of flavor, we all loved it. She used sweet potato instead of butternut squash and coconut oil instead of olive oil. The leftovers tasted great and I will definitely be making this again in the future.
Farmhouse Farro Salad from Love and Lemons
Prep Time: 10 minutes Cook Time: 35 minutes Total Time: 45 minutes
Ingredients: farro, sweet potato, kale, salad greens, carrots, apple, radishes, parsley, toasted almonds, olive oil, apple cider vinegar, dijon, maple syrup or orange juice, salt and pepper.
I always forget about farro but I think it is such a chewy and delicious grain. We enjoyed this creative and unique fall salad.
Quinoa Stuffed Acorn Squash Rings from Oh My Veggies
Prep Time: 40 minutes Cook Time: 40 minutes Total Time: 1 hour 20 minutes
Ingredients: olive oil, quinoa, vegetable broth, onion, apple, cheddar, cranberries, sage, walnuts, egg, acorn squash, butter, maple syrup.
I love the presentation of this beautiful dish! This dish is a labor of love but in my opinion worth it.
Squash and Apple Soup from Floating Kitchen
Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes
Ingredients: unsalted butter, onion, butternut squash, apple, vegetable stock, sage leaves, black pepper, allspice, cream, olive oil, halloumi cheese.
This soup turnd out so deliciously! I was a little disappointed because I scoured high and low to try to find halloumi this week but literally everywhere was out of halloumi! I think there must be a halloumi shortage where I live right now so next time I see some I’m going to stock up! I used shaved parmesan instead and in the end the dish was still so so good.
Lunchbox Couscous from Cook Republic
Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes
Ingredients: couscous, salt, sweet paprika, vinegar, butter, dried thyme, dried rosemary, dried garlic granules, lime, spinach, spring onion, sun-dried tomatoes, {goat’s milk} feta cheese, black olives, roasted pumpkin, olive oil.
For some reason I didn’t love this dish, however the rest of my family loved it. I think my slight dislike is because there were sun dried tomatoes in it; I used to love sun dried tomatoes but then I ate too much of them a while back and now they sort of disturb me. It was an easy dish to make, although I left out the rosemary and used roasted butternut squash instead of pumpkin.
