Autumn Recipes Meal Plan

What’s for dinner you ask? The recipes in this week’s Autumn recipes meal plan are so delicious and healthy and will make planning your menu for this Autumn week much easier. I hope you enjoy the potato topped veggies, lentil soup, veggie enchiladas and two salads.

I’m still trying to figure out what life is supposed to look like with three kids and my strategy this week has been to get out during the day, everyday.  I try this because if I don’t get out before noon I usually will end up staying home trying to “catch up” on house chores which is a losing game right now for me. 

We went to the zoo, the park, visited my parents, got Adelaide’s ears pierced, celebrated Jessica’s birthday, fed the ducks and went shopping.  It was a full week and although going out in the day is great for the kids and I, I end up exhausted after and don’t have the energy to fold all the laundry (so much laundry!) or keep up with dishes quite like I used to.

Thank goodness for great family who help me pick up what I’m too tired to; Rick has been maintaining the cleanliness of the house, my mom folded the five clean loads of laundry piling up in my room yesterday when she came over, my dad made us all an amazing dinner last night, and my sister took my kids to the park.  They say it takes a village to raise a child, and while that certainly feels true, I also feel like it takes a village to keep a house clean and a new mom sane.  Thank you to my village.

Somehow during this full week I managed to make some great meals.  This week’s meal plan includes two delicious salads, one amazing soup (that makes a ton of leftovers), unique fall enchiladas, and comforting potato-topped vegetables.  I hope you enjoy the recipes and that they help you get through whatever craziness you are currently trying to balance.

Lentil and Quinoa Stew

Prep Time: 15 minutes Cook Time: 50 minutes Total Time: 1 hour 5 minutes

Ingredients: vegetable broth, brown lentils, quinoa, organic fire-roasted tomatoes, swiss chard, yellow onion, celery, sweet potato, fresh parsley, garlic, apple cider vinegar, olive oil, cayenne pepper, all-purpose seasoning, paprika, thyme, cumin, sea salt, black pepper, bay leaf.

This soup was amazingly delicious! We all loved it and ate it as leftovers (which were equally amazing)  This recipe makes a huge batches of I actually froze half of it and look forward to eating it on a lazy day soon.  I left out the cayenne pepper and all-purpose seasoning and added a little delicate squash in that I had laying around.

Ingredients: carrots, cauliflower, broccoli, green beans, fennel, butter, flour, vegetable stock, dry white wine, milk, fresh sage, salt and pepper, potatoes, plain yogurt, parmesan.

Potato Topped Vegetables is a family favorite, especially for my sister, Jessica.  She loves this and requests it for her birthday most years. She just turned twenty-five and requested it again, always a hit.

Prep Time: 15 minutes Cook Time: 1 hour Total Time: 1 hour 15 minutes

Ingredients: olive, shallot, garlic cloves, ancho chile powder, salt, cumin, delicata squash, lime, water, red bell pepper, black beans, flour tortillas, red enchilada sauce, shredded cheese, creme fraiche, lime, avocado, cilantro.

Kale, Pomegranate and Persimmon Salad

Prep Time: 15 minutes Total Time: 15 minutes

Ingredients: kale, maple syrup, lemon juice, olive oil, sea salt, fuyu persimmons, pomegranate arils, roasted pistachios.

This salad was interesting and unique.  If I make it again I would massage the kale even more because I did a lazy job and they were still a little rough. I can’t get enough of persimmons lately.

Pear, Pomegranate and Spinach Salad

Prep Time: 15 minutes Cook Time: 1 hour Total Time: 15 minutes

Ingredients: walnuts or pecans, pomegranate arils, feta cheese, dried cranberries, bartlett pears, spinach, apple cider vinegar, olive oil, honey, dijon.

This salad was wonderful.  I used candied pecans and left out the dijon. I will definitely be making this again.
