I don’t know about you, but once summer hits I struggle to maintain any sort of routine or normalcy, including meal planning! Do you struggle with this, too? I am always on the lookout for quick, simple, healthy summer dinner recipes to help summer run more smoothly. Today I’m sharing five healthy summer dinner recipes to enjoy this July, with a grocery shopping list. There are three vibrant salads, slow cooker carnitas tacos, and a made-from-scratch tomato soup.
Healthy Summer Dinner Recipes
Fresh Tomato Soup with Gruyere Croutons from Rhubarbarians
Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes
Ingredients:Â rustic bread, butter, gruyere cheese, white onion, carrots, celery, thyme, vine ripened tomatoes, stock, basil.
Fresh tomato soup is one of my favorite summer dishes and is perfect for when you have a surplus of tomatoes from your garden or amazing heirloom offerings at your farmer’s market. You can definitely add a little bit of cream to this soup if that’s your thing! I can’t help myself.
Prosciutto Melon Salad from Mon Petit Four
Prep Time: 10 minutes Total Time 10 minutes
Ingredients:Â cantaloupe, prosciutto, basil, olive oil or basil oil, balsamic vinegar, sea salt and ground pepper.
There are night, especially in summer, when I don’t really have the energy to whip up a fussy meal and then try to get my kids to eat it. On those nights I let my kids have something they love like bagels and fruit, macaroni or granola and yogurt and I whip up something like this prosciutto melon salad that I adore and my kids wouldn’t appreciate anyway. I absolutely love this combination and can’t get enough. Sometimes I throw in some fresh mozzarella as well.
Slow Cooker Carnitas with Pineapple Salsa from Show me the Yummy
Prep Time: 20 minutes Cook Time: 8 hours Total Time: 8 hours 20 minutes
Ingredients:Â boneless pork shoulder, smoked paprika, cumin, chili powder, salt, pepper, onion powder, garlic powder, oregano, olive oil, fresh orange juice, fresh lime juice, fresh lemon juice, soy sauce, white vinegar, pineapple salsa {pineapple, green bell peppers, diced cucumbers, red onion, cilantro, jalapeno, lime juice}, avocado, cotija, tortillas.
This is a great healthy summer dinner recipe because you can prep everything in the morning when you still have energy and store the salsa in the fridge while the crockpot does its magic on the pork. I love the fresh pineapple salsa that goes with this recipe.
Watermelon Chicken Salad from Home and Plate
Prep Time:15 minutes Total Time:Â 15 minutes
Ingredients:Â spring greens, watermelon, pine nuts, feta cheese, grilled chicken, lime juice, honey, olive oil, garlic, mint, fresh pepper.
If you haven’t tried the combo of watermelon, feta and chicken you are in for a treat! I absolutely love this flavor combo and how easy and quick this dish is to throw together. The recipe itself is measured for 2 servings, so just adjust ingredient amounts as needed for larger family sizes. This is a great salad to bring to a picnic or outdoor adventure.
Raspberry Brie Salad with Avocado Dressing from Wholesome Yum
Prep Time: 10 minutes Total Time: 10 minutes
Ingredients:Â arugula, raspberries, brie, pecans, avocados, water, olive oil, lime juice, garlic, sea salt, black pepper.
Lately I’ve been a little obsessed with brie, so of course I was drawn to this delicious brie + berry salad! I love the pretty presentation and the healthy avocado dressing. You could sizzle up some grilled chicken along with this and you have yourself a complete dinner!
